Zucchini Casserole

This zucchini casserole is one of those perfect year-round potluck side dishes that works for almost every occasion (see also: Cheesy Potluck Potatoes). While zucchini and summer squash are in abundance during the Summer months, this dish will seem equally at home as part of a Thanksgiving spread as it will on your picnic table for an outdoor barbecue. I love the textures in this dish – it’s creamy and hearty with a crunchy topping and it makes for a filling side dish to poultry, steak, burgers or fish.

Not only is this casserole a crowd pleaser, it’s also super simple to make and rings in at less than 130 calories or only 3 Weight Watchers Points+ per serving. Ingredients: Directions: Preheat the oven to 350.In a large saute pan or skillet, bring 2 tablespoons of butter over medium heat until melted. : ) Ben surprised me by taking Friday off, so I set my to-do list aside and we played hooky for the day! Between shopping, stuffing ourselves with Mexican food for lunch, and enjoying a quiet dinner downtown, we caught a quick 9 holes on the golf course in the afternoon. I just love driving that little electric cart (and catching serious air over hidden holes on the green! Ahem.) It was approximately 14,000 degrees, give or take a few thousand, so we weren’t even mad when the sprinklers came on in the middle of hole 6. The highlight of our Saturday was finding Chobani on sale at HyVee – 10/$8.88 aka the best deal I’ve ever found – to which I might have blacked out and bought over $20 worth of yogurt. And inviting the family over for a BBQ later that night!

S’mores blizzards with cookie dough, which I ordered on Sunday night while doing my part to celebrate National Ice Cream Day, is helping too. Anyway, obviously I’m a cookie dough fiend and, coupled with my summer cherry obsession, this Cherry-Almond Cookie Dough Oatmeal totally and completely hits the spot. In a non-gaggy actually eating a bowl of sugar cookie dough for breakfast sort of way. Once they’re pitted, slice ‘em in half and set aside.
