Living in Japan meant I was able to feed my inner gyoza monster on a regular basis. In our apartment complex in Tokyo we had a little mini supermarket in the courtyard. The word _nanban_ uses the kanji characters for 'south' and 'savage', meaning savages who come from the south. It was originally used to refer to the Portuguese, the first non-Asian foreigners to land on Japanese soil. Later it came to refer all foreigners except for long-time neighbors China and Korea - or in other words, the Europeans. One way I like to enjoy them is to make maze gohan (混ぜご飯), which just means ‘mixed rice’, featuring the ingredient in question. Maze gohan (pronouned mazeh-go-han) differs from takikomi gohan (炊き込みご飯), such as this mushroom rice, where the ingredients are cooked with the rice. Maze gohan is more suited for delicate ingredients. It’s also a frugal way of stretching the use of some rather more expensive vegetables, such as really fresh peas. I got an email over the weekend from someone asking for vegetarian recipes. Well, there are a lot of vegetarian and vegan recipes here actually. Here is one I posted last year, a tasty ovo-vegetarian tofu-and-egg dish inspired by healthy Korean cooking, named after a classic italian dish. And of course, great in bentos! Bento filler: Cucumber and Nashi (Asian pear) marinated salad. Cucumbers are a perennial staple for me.

They are available at any time of the year, even in the depth of winter. Sure they are greenhouse grown, but they are for most of the year anyway.
