In Season :: Creamy Tortilla Soup

Here in Austin, we consume a serious amount of tacos. Breakfast, lunch, dinner, or snack… any time of day can be considered taco time. Because of this, I always have leftover tortillas. When they start to get a little stale, I pop them in the freezer and eventually make this soup. There are two types of tortilla soup: the thin brothy kind ( usually with chicken ), and this creamy version where corn tortillas are cooked into the base of the soup as a thickener.
Just between you and me, I didn’t make these muffins intending to post them on the blog. Muffins don’t really have the tendency to be especially photogenic — they’re just kind of… muffins, you know? Well, one bite and I knew these were anything but ordinary, and the fact that something so healthy can also be so addictively delicious… I knew that I couldn’t keep them to myself. Now that Phoebe’s started to eat more solid foods, I’ve been having a lot of fun making things that are packed full of nutrition and that both of us love to eat. A few of our current favorites? Roasted sweet potatoes mashed with maple & cinnamon, avocado and berry yogurt “pudding” and now these muffins, obviously.

We don’t really have much to say about what emerged from the TasteSpotting Kitchen last week during our Dreyer’s/Edy’s Slow Churned Light Ice Cream fiesta… So we’re just going to share some drool-worthy photos and assure you that yes, you absolutely should, no, you need , to make these Chocolate-Dipped Coffee Ice Cream + Glazed Doughnut Sandwiches immediately. By the way, we didn’t make our own doughnuts , but don’t let that hold you back from doing so!
