Maybe you woke up 35 minutes late and couldn’t wash your hair. Dumped hot coffee on your new white shirt? Couldn’t fit into your new white shirt? Creamy Caprese Pasta serves 4-6 1 pound whole wheat pasta (noodles such as penne work best) 1 cup of your favorite pasta/tomato sauce 1/3 cup heavy cream or half and half 1/3 cup freshly grated parmesan cheese + more for garnish 4 ounces fresh mozzarella, cut into cubes 1 pint of grape tomatoes (I cut some in half and left some whole) 1 bunch of fresh basil leaves Preheat oven to 350 degrees F.

Ingredients 1 large baked potato (russett or sweet) 1 Tbsp. butter 2 eggs 2 strips bacon, cooked and crumbled 2 Tbsp. shredded cheddar or gouda cheese 1 Tbsp. fresh parsley, chopped salt and freshly ground black pepper Method Lay the baked potato on its side, and use a knife to carefully cut off the top third of the potato. Place 1/2 tablespoon of butter in the middle of each bowl. Bake at 350 degrees F for 20-25 minutes, or until the egg whites are set.

The Lorax Cake Pops. It’s Cake Pop time again. And I made some cute ones for Dr Seuss’ The Lorax movie that comes out March 2. These were fun to recreate in bright colors and cake. Here’s a run down so you can go make. Okay, I can’t rhyme – Let’s just get this ball rolling. It’s time. First up are Bar-ba-loots. They’re super cute and they love to eat Truffula fruit. Okay, that’s enough. I like to roll my cake balls by hand first so I can make sure I have enough and if I need to, I can make some of them bigger or smaller at the end to keep them all about the same size.
(At the end of the post, I’ll share a pdf you can download for all of these cake pops.) Once they’re rolled, you can reshape them however you like. For Bar-ba-loots, roll them into an oval and pinch in on the four rounded corners. Pinch more at the top than at the bottom and then press down on the top center to make a spot for the eyes. My boyfriend and his friends have this thing where every super bowl they have a “Deep-Fry Fest” where, well they deep fry everything; so if you’re anything like my boyfriend you now have another “Deep Fry Fest” recipe to use! Two things I can’t stress enough is: 1) the importance of having the potatoes completely coated; no holes please, or the mashed potatoes will pour out of the holes once they hit the oil. 2) the importance of the rings being frozen solid before entering the oil…it just helps with the frying, that’s all.
