Soba Salad Recipe. Soba literally means “buckwheat” in Japanese and is also the name of the thin noodles made from buckwheat.

Greyish purple in hue and with a nutty flavor, they’re unique in the world of noodles. In Japan, soba is traditionally served either cold or hot with a dashi based broth, but as a noodle, soba is versatile enough to be topped with a Pomodoro or tossed in a salad like this one. With a rich earthy dressing, sweet tomatoes, creamy avocado and verdant cilantro, soba salad well rounded in the flavor department with lots of little surprises in every bite. Add to that some tofu that’s marinated and caramelized, and you have a salad that makes for a delicious side, or a filling vegan entrée. Aside from tasting great, soba noodles have about 40% fewer calories than wheat noodles like spaghetti, and are rich in vitamins and minerals like Thiamin and Manganese.

This Japanese noodle dish has fewer calories than other pastas, and is high in vitamins and minerals. Lemony Potato Salad. If you’re not a big fan (or even if you are a fan) of the starchy mayonnaise that usually passes for potato salad, give this recipe a try.

It’s much less creamy and if you’re totally anti-mayo, you can just omit it and replace it with an equal amount of olive oil. It’s lemony, with a little bite coming from the briny capers and a little crunch coming from the pickled onions and cucumber. Try adding some different spices like basil, dill or caraway. A little whole grain mustard complements the capers nicely and adds another textural element as well.

Lemony Potato Salad2 russet potatos cut into 3/4″ cubes1 tsp kosher salt 1/4 small onion sliced as thin as possible 2″ length of hothouse cucumber seeded, quartered and thin1 Tbs lemon juice 1 Tbs good olive oil 1 Tbs mayonaise (optional, if omitting add another Tbs olive oil) 1/2 tsp kosher salt1 Tbs drained capers Boil the potatoes in ample water until soft enough to stick a fork through. Green Kitchen Stories is a beautiful space. I love their photographic aesthetic – brightly saturated food on dusky blue-gray backgrounds, just a little bit of organized mess in each photo. And their recipes? Really healthy. Not healthy like when I say it – I usually mean something along the lines of “I didn’t put any cheese on this! I was so happy to see that both their high-quality recipes and beautiful photography are still present in their book.
