Savory Pumpkin/Flaxseed Onion Crackers. As Mr AtV and I prepare for a weekend getaway to our favorite coastal town, I've been spending these last few days deciding what food I want to pack - my favorite part of vaycay planning. I also might enjoy making lists a little to much for my own good, but that's another story for another post (addicted to list making, anyone?). These crackers will definitely be coming along with me for our road trip...that is, if there's any left before we leave town. If you love a good savory onion cracker then I highly recommend making these. They're just as good plain as they are with various toppings like avocado, fresh sliced tomato, or Creamy Cucumber Dressing.

Use a spice grinder (my spice grinder is actually a coffee grinder) and coarsely grind your seeds in batches. Option 2. In a bowl combine together: Vegetarian Recipes. Great Vegetarian Recipes! Vegetable Lasagna Cupcakes. How about a couple of cupcakes for dinner? I haven’t made lasagna in ages but after seeing the oh-so-cute Petite Lasagnas at Can You Stay For Dinner? , I just had to make a vegan version. Super easy to make using wonton wrappers, the mini lasagnas bake in about ten minutes or so. I didn’t bother to replace the meat in the sauce called for in the original recipe, I just went with vegetables – fresh shiitake mushrooms and baby zucchini from the farmers market.

Baby veggies fit in easily without having to chop them into smaller pieces. Once cool enough to handle, you can actually pick one up and eat it without a fork. I only wish the Daiya cheese was a little more melted (I would have left it in the oven for a bit longer but the tips of the wontons were getting to be pretty brown and I have a very touchy smoke detector). Vegetable Lasagna CupcakesMakes 12 24 wonton wrappers 1 cup pasta sauce or spaghetti sauce 1/4 cup of your favorite cheese Next, make the tofu ricotta.

Five years ago, I was bracing myself for the first holidays without mom by giving myself a break and visiting a friend in NYC for a week. It had been a whirlwind that fall and I was breathless – taking care of her affairs, navigating family matters, treading lightly in my own mind.

Getting away was what I needed. To have my feet off the ground. To feel funny and vivacious. Five years later, it’s been another whirlwind year for a lot of reasons.
