This is my last day of spring break before classes resume next week. I wish I could say I spent my break travelling to some warm and sunny location, but instead, I stayed home and worked frantically on my thesis and various papers that I need to finish up for school. Initially I had plans to cook and bake a ton this week but writing and researching sucked up most of my time and I wasn’t able to cook as much as I’d hoped. Ah, life as a grad student!I’m generally not a frilly type person, but when it comes to cakes-I want my frill! In this case I got my fix with a ruffle cake. This is a little bit of a variaion on this hugely popular version. My quest for a ruffle cake started with this one —wow, right? As many of you know I’m working on my cake carving skills, so while I can’t pull a Maggie Austen, I did pull off a vertical ruffle cake. Ruffle Cake

When it comes to chocolate covered strawberries, I’m really into the chocolate covered part. I’ll eat a little bit of the strawberry but only if there’s chocolate in those bites and of course I don’t eat the stem. Greenery isn’t my thing. So yes, I will admit that if my boyfriend Ryan buys me chocolate covered strawberries from Godiva, he just blew a buttload of money on half eaten fruit.

You probably can’t tell from the pictures, but this stovetop macaroni and cheese is incredibly creamy. Not only that but it came together very quickly. In fact I’m pretty sure it doesn’t take much more time than cooking up a box of Kraft mac and cheese! And it’s got to be healthier. Sure, there’s a ton of cheese, and quite a bit of butter, but at least it doesn’t have any weird sounding chemicals or powdered cheese mix. To be completely honest, I do love an occasional box of Kraft mac and cheese.RecipeGirl.com
Countdown to Cinco de Mayo! Sure, that may not mean anything to you if you live in North Dakota, Ireland, Australia or Japan. But here in SoCal… sooooo close to… Back in January I shared 10 new recipes to try for dinner and promised to share something like this again. These are recipes that I’ve tried that haven’t made it… Last week I had the unique opportunity of visiting Louisiana for the first time ever!If you’re looking for authentic Irish food for St. Patrick’s Day, don’t go with corned beef and cabbage. That’s the American version of Irish food. A bit more authentic is colcannon, which is really more of an idea than a strict recipe.

If you follow me on Twitter and Instagram , you may know that I’m a little obsessed, thanks to Kristen , with taking pictures of my coffee . Using the # ShotofCoffee hashtag, many of us have been sharing our morning cup of Joe with others. This week, Kristen of Dine and Dish and Tracey Clark of Shutter Sisters are teaming up for Global Immunization Week with the United Nations Foundation’s Shot@Life campaign in a project to make vaccines accessible to children everywhere. Their goal is to raise awareness and funds so that vaccines are easily accessible for everyone. Kristen and Tracey have invited everyone to join them for a week of coffee, creativity & giving kids a shot at life! All this week they are encouraging you to share your mug shots (#mymugshot) of your morning shot of coffee (#shotofcoffee) with them on Instagram, Facebook, Twitter, Flickr, and/or your blog.

When I woke up I was practically shaking with anger. I was furious. I was livid. I was all of those other words in the thesaurus that say “ I mean business.”

In fact, people in general don't eat enough cake. Why is this? Why does cake get such a bad rap? Yes, yes, it's not as portable as cookies and caramels but it is still soooooooooo delicious.
