Quinoa Pilaf Recipe. Have you ever cooked with quinoa? It’s a South American grain-like seed that one prepares in a fashion similar to rice, simmered in water until the liquid is all absorbed. I first started cooking with quinoa (pronounced KEEN-wa) when I lived in San Francisco years ago. It has this wonderful nutty flavor, that actually doesn’t need much added to it; I used to make a quick batch, pour on some flax seed oil, sprinkle with a little salt, and gobble it up. If you have never tried it, I encourage you to track some down. The following is a quinoa pilaf recipe based on one given to me by my friend Steve. Do you have a favorite quinoa recipe? Homemade Applesauce Recipe. 1 Boil peeled, cored, quartered apples with lemon, cinnamon, sugar, salt in 1 cup water: Place the peeled, cored, and quartered apples into a large pot. Add the strips of lemon peel, the lemon juice or vinegar, cinnamon, sugar, water and salt. (You might want to start with half the sugar at this point and add more to taste later.) Bring to a boil on high heat, then lower the temperature, cover the pot, and maintain a low simmer for 15-20 minutes, until the apples are completely tender and cooked through. 2 Remove lemon peels, mash the cooked apples: Once the apples are cooked through, remove the pot from the heat. Remove the lemon peels. Use a potato masher to mash the cooked apples in the pot to make a chunky applesauce. If the applesauce is too thick, add more water to thin it out. If not sweet enough, add more sugar to taste. This applesauce is delicious either hot or chilled.

Freezes well and will last at least a year in a cold freezer. Buttery Tomato Pasta Recipe. About once a week, for my entire upbringing, my mother would prepare a very simple side of pasta with a sweet, buttery tomato sauce. Usually she used elbow macaroni pasta, because usually a small bowl of tomato pasta would be served alongside tuna macaroni salad, our standard Catholic fish-on-Fridays family meal. Mom would just make extra macaroni and stir in the tomato sauce for it.

She did this because my dad requested it, and he wanted it because that’s what his mother in Minnesota used to make for him. Oddly, the hot buttery tomato pasta was, and still is, a perfect taste complement to the cool, crunchy, acidic tuna salad. This is my father’s comfort food. My mom insists that the trick to the tomatoes is the sugar, and I agree.

Ingredients 2 large yellow onions, peeled, sliced into 1/2-inch to 3/4-inch thick ringed slices, rings separated (See How to Slice an Onion)2 cups buttermilk, or 1 cup plain yogurt mixed with 1 cup milkSaltFreshly ground black pepper1 1/4 cups all-purpose flour and 1/4 cup cornmeal OR 1 cup prepared cornbread flour plus 1/2 cup all-purpose flour2 or 3 cups of grapeseed oil, or other high smoke-point oil such as canola oil or peanut oil Equipment needed: a 5-quart heavy-bottomed dutch oven, tongs, candy thermometer, paper towels, cookie sheets Method 1 Combine the buttermilk (or yogurt and milk) with 1 1/2 teaspoons salt and 1 teaspoon black pepper in a large bowl.

Add the onions to the buttermilk mixture and coat thoroughly. Method 1 Bring a large pot of salted water to a simmer (1 Tbsp of salt for every 2 quarts of water) while you peel the celery roots with a knife. Cut the celery roots into 1-inch pieces and boil for 25-30 minutes, until soft 2 Drain the celery roots, return them to the pot to the stovetop on low.

Let the celery roots steam for a minute or to, shaking the pan a bit to prevent sticking. 3 Add the milk or cream, butter and a generous pinch of salt and mash with a potato masher until it is as smooth as you like it. Add salt to taste and garnish with the celery root leaves, if using. Jamaican Rice and Peas (Coconut Rice and Beans) Recipe.

The chile is cooked whole with the rice and is there just for a bit of flavor. It doesn't make the rice hot at all, as it stays whole and you discard it at the end. Method 1 Heat the oil in a medium pot over medium-high heat. Add the onions and sauté for 4-5 minutes, until they begin to brown on the edges. 2 Add the garlic and rice, stir well and cook for another 2-3 minutes, stirring often. 3 Add the grated ginger, salt, water, stock and coconut milk and stir well. Add the kidney beans and sprinkle the thyme over everything. 4 The rice should be done in about 15-20 minutes, depending on the type of rice you are using (some long grained rice takes longer to cook). This soufflé isn't nearly as touchy as a traditional soufflé. In fact it's hard to mess up. It barely puffs up, which means it doesn't deflate that much either. You might want to experiment a bit with the seasonings, such as some ginger, ground or fresh minced, some thyme, maybe a little orange zest, or a pinch of coriander. You might also try substituting all or some of the carrots with parsnips. Just remember the better the inputs, the better the results. A good use of carrots from the farmers market, or organic carrots which tend to be sweeter and more flavorful. Method 1 Preheat oven to 350°F. 2 Place carrots in a saucepan and cover with an inch of water. 3 Place carrot purée in a large bowl. 4 In a separate bowl, whip up the eggs until frothy.

When I was a kid I begged for mushroom soup. When I was in college I made mushroom quesadillas. These days I think I could easily go through a pound of sautéed mushrooms in one sitting. In this recipe we are sautéing button or cremini mushrooms first dry, then with butter, then adding thyme, and some Marsala wine. Do you have a favorite way of preparing mushrooms as a side?
