Banana Upside Down Muffins ~ Recipes by Amanda's Cookin

Quite a while ago I received a cookbook called Sweet!: From Agave to Turbinado, Home Baking with Every Kind of Natural Sugar and Sweetener by Mani Niall. I had thumbed through it several times and bookmarked quite a few recipes, but never found the time to make anything.
Or, call them egg rolls or spring rolls, these beauties are my mom’s claim to fame! Egg rolls with sweet soy sauce and rice vinegar dipping sauce Egg rolls hold many treasured memories for me…. The other day I went to pick up some Chinese take out and smiled to myself because in the corner there were 3 teenagers peeling lumpia wrappers for egg rolls and chatting. I think most of my conversations with my mom during my teen years took place around the dining room table while she made egg rolls and I had to peel hundreds of lumpia wrappers.

Christmas Rocky Road Heavenly Hash ~ Cajun Chef Ryan

On my daily commute to and from work, I typically listen to NPR radio for the majority of my news fix, which makes up for the lack of getting the daily print newspaper, and I rarely watch the news on the tele anymore either. One of the NPR treats that I enjoy is the food features that I happen to catch including updates from Nigella Lawson and the Kitchen Sisters, among others they will broadcast. On November 30, 2009, NPR featured Nigella promoting her Nigella Christmas cookbook and in particular, I was fascinated with her new take on a rocky road dessert treat. The original recipe can be found at the story titled: Nigella Offers Simple Recipes For Holiday Cheer . I like the way Nigella tweaked this recipe from her original where she uses the amaretti cookies instead of plain, and adds some candied cherries just as red as Rudolph’s nose, along with some Brazil nuts, and then the snowy marshmallows and snowfall of confectioner’s sugar make this a perfect Christmas dessert treat.

March 30, 2013 Black Bean & Quinoa Soup Serves 6 Total time: 40 minutes || Active time: 20 minutes My mailman rarely talks to me, but he made sure to tell me that this soup smelled great when I was cooking it. So, there you go, endorsed by the US Postal Service. The thing about this soup, is that it’s almost the only time in the world where I don’t rinse the canned beans. http://www.theppk.com/blog/

Sesame Chicken

Oh how I love sesame chicken, let me count the ways. It makes me feel like a little kid again everytime I eat it. It’s not very spicy, it’s a little sweet, and there’s those little sauce drenched chicken nuggets. What could be better? http://eclecticrecipes.com/sesame-chicken
http://blogs.babble.com/family-kitchen/2011/05/17/easy-chicken-burritos/ Chicken Burritos I made a roasted chicken over the weekend, and after enjoying it on the first day, I’ve been trying to come up with a more innovative recipe than just a simple sandwich. When I spotted some leftover tortillas in the fridge, I instantly thought of finally making my own homemade burritos. One of my embarrassing, guilty pleasures are those cheap, frozen burritos. I don’t know what it is about them, besides the fact they are loaded with fat, but I have loved them for years.

It’s freezing here in Phoenix! I woke up this morning and it was 40 degrees! I didn’t know what to do with myself; I can barely get out of bed! It’s nice, though, being able to wear my coats and boots without feeling like a complete idiot. That’s why I figured that I had better make some stew while the weather lasts, as I’m sure it will be back in the 80s in a few weeks. I’ve made stew with beer and stew with wine before, but never a stew with both beer and wine. http://crepesofwrath.net/2009/12/02/drunken-irish-stew/

Chicken Noodle Soup with Mushrooms

Here is a creamy, soothing recipe for chicken noodle soup. I added mushrooms and lots of herbs for more flavor in my version of this classic comfort food. My son started to get a fever yesterday, but thankfully, it broke quickly. This was his feel better soup. I was hoping he wouldn’t get what I caught earlier in the week.

Beef and Broccoli Stir Fry

Of all the Americanized Chinese stir fries, beef and broccoli has to be one of the most popular. It’s so simple, and so good. This recipe is an adaptation of my mom’s very Americanized version of the classic stir fry. Her secret ingredient to an irresistible beef and broccoli stir fry is cheddar cheese. Not a lot, just a little to slightly thicken the sauce and give an irresistible flavor.

Mexican Green Rice Salad

Mexican Green Rice Salad This is just about the easiest little salad ever. I told you earlier in the week how infatuated I was last summer with rice salads, and now that the weather has warmed up, I can’t get them out of my head. I’ve been dreaming about all type of ways to reinvent a rice salad. This was my latest creation I made for Cinco de Mayo. It’s loaded with spinach and cilantro for a brilliant color and unique taste.

Historical facts Saudi Arabia is the home land of the Date Palm Tree. With more than 10000 years of age it is one of the oldest trees in the world. Many nations transferred the palm trees from Saudi Arabia (used to be called Arabian Peninsula) to other places in the world after they became amused by its charming beauty and its endless generosity. For example, the great Alexander was the first to introduce palm trees to Pakistan. And with the entrance of the Kalifa Abdualrahman Aldakel to Spain (Andalusia) the first palm tree entered Spain.
