They're great for a quick pea mash to accompany a roast or grilled meat and I love their use in pasta. They're sweet, juicy and full of flavour. 2 cups of frozen peas 1 big bunch of coarsley chopped spinach leaves 1 small bunch of finely chopped mint leaves 1 small red onion finely diced 1 clove of garlic finely diced 2-3 cups of chicken stock salt and pepper to taste a "splash" of cream In a medium sized pot fry off the onion and garlic on a medium heat till they become translucent Add the peas and give everything a good stir.

It rained. And then it rained some more. And it didn't stop raining! How my old wreck of a car managed to survive the flash flooding I will never know. Winter has certainly made a grand entrance! On top of the rain, it was windy and all I kept on thinking was that I needed to settle down in front of the T.V. with a big bowl of soup. I wanted to experiment this time by getting out of my comfort zone and doing something different. I recently managed to get hold of a Delicious magazine form the UK. Souvlaki For The Soul. Whilst it's all fine and dandy to harp on about “rejuvenation” and “reinvigoration” my sinuses think otherwise! Yes, I'm one of those sinus sufferers that looks forward to this time of the year with mixed emotions. As we speak, my eyes are watering and I have this uncontrollable urge to sneeze madly. I can also feel that my body is weaker. You see, my sinus pains usually end up turning into a cold. I'm not going to feel sorry for myself either. Lamb Fricassee Recipe. I know I've featured it numerous times but the truth is, like anything else in my life-there is a balance. But I think I may be partly at fault here, making you think that ALL Greeks are made lamb eaters. Maybe it's those images of slaughtered lamb on the spits at Easter time that have ironed this idea in people’s minds. And yes, Easter is that one grand celebration where lamb is the featured star. When people find out my heritage, one of the many comments I hear is “I had the best lamb in Greece...made with oregano, lemon juice and olive oil”-that famous holy trinity I wrote about, eons ago. Let's deviate from the common to something a little different.

When the soup was promised, it was rainy, bleary, and insufficiently May-like to please me, though I doubt Deb Not Being Pleased ranks anywhere on near the top of the concerns list of whatever powers control the weather (or, for that matter, Deb’s toddler when he’s set his mind to emptying mama’s purse on the floor again), seeing as we have another week of it on order. Fortunately, this is a soup for exactly these trying spring times. My love of hearty crocks of hearty French onion soup is well-documented (it’s the rare recipe I’ve covered twice in the archives, and you just know I had to riff on it here) because I have to insist that nothing is so loud with flavor as onions, cooked for an hour with a meaty broth and cognac, then broiled with a charred cap of strong cheese. Oof, how long must we wait until it gets cold again? But to me, French onion soup is a deep-winter affair, for cold, bleak days, not these.
