Start to finish, this healthy and light Japanese Udon Miso Noodle Soup takes less than 15 minutes. Udon noodles are white, fat ‘n slighty chewy, wheat-based noodles from Japan. You can find them in the refrigerated section of your Asian grocery store and many regular grocery stores. They also come in dried noodle form too, but I prefer the fresh, already-cooked noodles. If you can’t find (or you don’t eat wheat), substitute with any type of noodles, even regular ol’ linguine noodles. The type of mushrooms I used in the recipe is called shimeji mushrooms, or white beech mushrooms. What makes this udon miso soup so flavorful is the addition of miso. Since I have decided against buying foods in tin cans at the grocery stores, I've been trying to perfect making beans at home from scratch.
I've tried them on the stove, first time, hard as rocks. The second time, they were still a bit tough but at least chewable. Before cooking them, I recommend soaking the beans overnight or a minimum of 6 hours. Soaking the beans breaks down the oliogosaccharides that build up in the beans during the last stage of growing. Slow Cooker Beans 2 cups of dried beans soaked for at least 6 hours 6 cups of fresh filtered water (do not cook beans in soaking water) 1 piece of kombu 2 teaspoons sea salt In your slow cooker add soaked beans, water, kombu and sea salt. This vegetarian bean chili is a seriously hearty chili. I mean serious. I highly recommend grinding your own spices if you can. This isn’t to say I never use pre ground spices. In addition to the typical chili powder spices, cumin, coriander, chilis, oregano, I added cocoa powder and cinnamon. She had been disappointed when I had made nothing for our provincial holiday on June 24 (St. Jean Baptiste). I loved the idea and was excited to create something yummy that was red and white like the Canadian flag. When Anna made the suggestion, I immediately thought of strawberries since they are in season. It took me a few days to figure out exactly what I was going to make with strawberries, but I knew I wanted to use cashews and coconut for the white part of the dessert To be honest when I started preparing the dish I wasn’t even completely sure what I was going to add and how I was going to put it together. It was a process of adding a little bit of a few different ingredients until I was happy with the result.
