I love a good meatball. It’s a game changer guys (try hitting a home run if someone throws you one of these bad boys…you’ll be too busy licking your fingers to step up to bat). I mean…what’s for dinner? Not pasta…again. Not hamburgers or tacos (although I’m always down for a good taco…I just wish I wasn’t the one who always had to MAKE the taco).
Lo-mein? How ‘bout NO-mein. And guys, a girl can only eat so many dumplings (or can she?)!! Sometimes just changing the appearance of a go-to food can totally shake things up. That’s what I’ve done here. And I steamed them instead of pan-frying them. A lot of times the dumplings here don’t have a very pronounced ginger flavor –it’s in the game…but warming the bench. And in the glaze? There isn’t a lot of soy or salt in the meat…you could add an extra teaspoon of soy…but, again with the glaze. Toss together the meatballs and set them in the steamer. 5 minutes. Cook your meatballs. Mix sauce. 16 minutes. 5 minutes.
Pour over meatballs and toss. Serve. Skillet Chicken with Bacon and White Wine Sauce. Hello crispy, saucy, delicious skillet chickaennn! You guys, I’ve got to be honest with you. I’ve had some ups and downs with chicken over the last decade – okay okay okay fine, maybe it’s been mostly downs. But the good news today is that things are finally taking a beautifully crispy turn upwards. Cheers and applause! Maybe I do like chicken after all (read: bacon, white wine, shallots)? This skillet chicken recipe is my new IT recipe — starting with the fact that it’s made entirely in one pan with small bite-sized pieces of salty bacon and sweet caramelized shallots, and ending with the fact that it’s going to have that golden, crispy chicken skin after the chicken is pan-fried a little bit before taking a nice oven-bath in the white wine pan sauce. And will there be warm, crusty bread dipped in the white wine pan sauce in between bites of chicken?
That is all, the end, goodnight. Bjork and I just returned home late last night from our five day trip to Park City, Utah. Serves: 8 Notes. Roasted Lemon Garlic Green Beans - Happy Monday everyone! Did anyone watch the Super Bowl yesterday? We did. The Super Bowl is one of the few times a year when we are actually social and invite people over, and it was a good time. I watched about half of the game (it was a pretty good one), watched the entire half time show (I have mixed feeling about that), and had a great time with friends and family. Anyways, I know what you are all thinking…really, you are starting the week off with green beans!
Yes, I am starting off the week with green beans, and I am very unapologetic about it, because these Roasted Lemon Garlic Green Beans are the BEST green beans you will ever eat, and no, that is no exaggeration. Roasted Lemon Garlic Green Beans Serves 4 12 oz green beans 1/2 Tbsp coconut oil, melted 1/4 tsp garlic powder salt and pepper juice of 1/2 a lemon Freshly grated parmesan cheese (optional) Calories: 60 Fat: 3.6 grams Carbs: 6.9 grams Protein: 1.6 grams By My Purple Spoon. Vanilla Chai Chia Pudding (vegan, gluten-free) Ever since Serial nabbed my attention (and everyone else’s) in early December, I’ve been obsessed with podcasts. I have an hour round-trip commute to work each day, so listening to them has splattered my once-deemed-monotonous daily drives with feelings of productivity and inspiration. There’s one called The One You Feed that I’ve fallen particularly in love with because it offers a fresh, realistic, and approachable perspective on life.
The entire series is inspired by this parable: An old grandfather told his grandson: “My son, there is a battle between two wolves inside us all. The boy thought about it, and asked, “Grandfather, which wolf wins?” The old man quietly replied, “The one you feed.” Let that settle for a moment. I’ve heard those words repeated so many times over the last two months as I’ve worked my way through about half of the 60+ podcasts in the series, and each time it resonates a little bit stronger with me. What does the above have to do with Vanilla Chai Chia Pudding? A. Easy Quinoa Fried Rice. Creamy Butternut, Bacon and Leek Pappardelle. Somebody give me a gigantic fork. Because this is my serving. Right here. Just when I think I can’t get any more common… oh wait – I can! Show me all the fall scenery forever. This is the second recipe I’m sharing from my video with DeLallo yesterday and it is easily my FAVE.
I get it. It’s not even complicated. But the flavors together are UNREAL. I’m also loving pappardelle at the moment. I probably should do this before I go into labor? Until then, I’ll be devouring these egg pappardelle pasta nests (how ridiculously cute?!) That dish is up next with these. Now… While this skillet is made with cream or half & half, it really gives a nice coating to the pappardelle and isn’t overly rich. Can’t get enough. AND! Print Creamy Butternut, Bacon and Leek Pappardelle Yield: serves about 4 Total Time: 35 minutes Ingredients: Directions: Heat a large skillet over medium heat and add the bacon. With the heat on low, stir in the half and half and the cheese. It’s an autumn cuddle. Here Are 21 Food Tricks That Totally Change Everything. Bake or Break | Outrageous Chocolate Cookies. Quinn and I are not among the throngs who celebrate Valentine’s Day. That day and all the chaos surrounding it have never appealed to me. Luckily, Quinn feels the same way. So, I’m not one to make heart-shaped baked goods. That doesn’t mean that I can’t indulge in one thing synonymous with Valentine’s Day – chocolate. I realize that for some people this may cause a shocked reaction on par with my husband’s the time I told him I’ve never watched Goonies before (or Jacob’s, upon discovering the internet). Obviously I grew up under a rock, right? Thus, given my proximity to concrete-like materials you’d think I have been better prepared for the texture of the one I purchased from the vending machine in the basement of my freshman dorm (not at 4 a.m. or anything, either, nope, not this angel!).
But I was not. It was like particle board, but even particle board has a fresher aroma. It took two hands to break off a piece. I understand that if I had toasted it, my experience might have been better. I can’t believe I waited so long to make these. The veggies were perfectly roasted, the potatoes were nice and tender and the caramelized onions were sweet and salty. The whole dish was delicious and it looked really pretty too. All of my friends loved these roasted vegetables and so did most of the kids.
