Grilled Chicken Veggie Bowls - Meal Prep. Tags: broccoli, brown rice, chicken, dinner, green beans, lunch, meal prep, quinoa, vegetables, weeknight dinner Lots of fun going on in my house right now. My husband and I joined 12 other couples in our area for a fun 8 week fitness challenge. Maybe I should delete the word fun, lol!

For 8 weeks we’ll be challenged to earn daily points in 5 categories. Check out this website for all of the details Each couple put in $40 and there are prizes at the end for those with the most points. It will be good for me to gain some self control, lol! My husband and I decided we wanted to try the meal prep world by preparing a weeks worth of food before hand. Here’s your line-up of ingredients. Grill up my Taco and Lime Chicken to get started. On with the cookies…. I love the look of these cookies. Although I’m not exactly celebrating Valentine’s Day, I can still get behind some of its trappings, especially the chocolate. Cooking for 2 recipes. Vegetable Tian. This is a recipe I adapted from one I found in “Barefoot in Paris”. We had friends over for dinner so I served this Vegetable Tian and it was a HUGE hit. The veggies were perfectly roasted, the potatoes were nice and tender and the caramelized onions were sweet and salty. The whole dish was delicious and it looked really pretty too. All of my friends loved these roasted vegetables and so did most of the kids.

I am looking forward to making this again and again.
