So I’m covering “the anti-grain” argument, primarily as it pertains to gluten, found in many grains. Sorry to throw a curve ball, but I want to give you both perspectives so you can decide for yourself. It’s a substance in some grains and many processed foods, and is what gives bread its elasticity and baked goods their fluffiness. Studies tie gluten to celiac disease, as well as a non-celiac gluten sensitivity. One study reports that one in 200 people have celiac because of gluten-containing grain consumption; other studies report this figure is a gross underestimate.
