I realize that for some people this may cause a shocked reaction on par with my husband’s the time I told him I’ve never watched Goonies before (or Jacob’s, upon discovering the internet). Obviously I grew up under a rock, right? Thus, given my proximity to concrete-like materials you’d think I have been better prepared for the texture of the one I purchased from the vending machine in the basement of my freshman dorm (not at 4 a.m. or anything, either, nope, not this angel!). But I was not. It was like particle board, but even particle board has a fresher aroma.

I understand that if I had toasted it, my experience might have been better. I can’t believe I waited so long to make these. Most recipes I have come across use a pie dough for the pastry but I was really stuck on getting a crust that was a little more sturdy — one with an egg. On this very last day of January, we’re tying up loose ends in preparation of not only the start of a new month, but a brand (Chinese) new year. We’re cleaning out our queue, which includes a recipe and post for That Chocolate Cake. Wait, which chocolate cake? That Chocolate Cake. Oh. That Chocolate Cake. Raspberry Ribbons! The holiday season is such a wonderful time of year.

There is Christmas music playing everywhere (no matter how sick of it you get, you know you love it!) , chilly weather, warm holiday drinks, crazy shopping lines, family parties, and best of all, cookies!! There is no doubt that this time of year is the ultimate time for all sorts of cookies to be made...and I always love seeing the overhead bill after holiday baking!

:) This year, aside from baking for my friends and family, I was lucky enough to participate in the first Food Blogger Cookie Swap thanks to Lindsay of Love and Olive Oil and Julie of The Little Kitchen! When I signed up to participate in the cookie swap, I was torn as to what cookie to make. Let’s face it: sometimes we all need a dessert that only makes two servings.

Sometimes we just can’t handle 12 servings. Sometimes we eat them all by ourselves. Sometimes we eat them all by ourselves in two hours. Sometimes we eat them all by ourselves in a matter of minutes. Sometimes it’s the best thing ever. FYI: I have no idea what that is like. Haven’t you always wished you could make just enough dessert for yourself? Or… just yourself? Me too. But more often than not, I’ve found it to be a hassle to drag out the mixer, cream the sugar and butter, sift the dry ingredients and all that fun stuff for a measly two cupcakes. What can I say?

Well, I was lazy. It is definitely your typical white cake; fluffy and soft, full of vanilla flavor, and the perfect vehicle for some fluffy white frosting. And it only takes one bowl! Death By Oreo Cupcakes. They are probably the best Oreo cakes I have ever tried.

A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise. That's right, you put a whole Oreo at the bottom of the cake. Ingredients 1 package Oreo Cookies, regular size 1 package Mini Oreo Cookies, for decoration (optional) 1 package chocolate cake mix (mix according to directions on box) 8 ounces cream cheese, room temperature 1/2 cup butter (1 stick), room temperature 3 3/4 cups powdered sugar 1 teaspoon vanilla extract cupcake liners Preheat oven to 350 degrees.
