I think these little cakes are such a tasty and simple side dish (or beautiful appetizer). I used zucchini and carrot but you could do them all zucchini or add yellow squash or onion, really any combination you want. I served this with my version of an Italian Panini- Flat bread, fresh mozzarella, tomato, basil, and pancetta with a drizzle of olive oil.
