French Fries: The No-Guilt Version

The taste, the texture, the dip-ability; it’s probably one of my favorite go-to comfort foods. However, I don’t need the fat of an actual deep fried potato, and I certainly do not favor processed french fries that come from the frozen food section of the grocery store. Enter: Healthy French Fries* Step 1: Peel your ‘taters. This isn’t necessary, though, but if you decide you want the skin on make sure you scrub-wash them first.

Step 2: Cut them into strips. Step 3: Place potatoes in colander and rinse the starch off of them. Step 4: Pat down the potatoes. Step 5: Drizzle Olive Oil over potatoes. Step 6: Salt those babies up. Step 7: Mix them up so they all get coated with the olive oil and salt. Step 8: Arrange them, on a baking sheet, in a single layer Step 9: Add anything else you like. Step 10: Place the potatoes into your preheated oven for 20 minutes. Step 11: Flip and continue to bake for 5-10 minutes. And then, voila… Healthy French Fries Enjoy! There we were on Friday night updating our site, when all of a sudden it disappeared! Gone…vanished… it was awful … We had wiped out our whole blog, no more recipes, no more comments, no more statistics… nothing. After moments of shock, yelling, screaming, and a few tears we calmed down and found our most recent backup. On Sunday night, after a few struggles, a little more yelling and help from tech support, we got the backup uploaded, we finally had our site back … Crisis averted. Needless to say, we were just not in the mood to experiment in the kitchen too much, so we just made dinner, fortunately for you, it was really good and we took photos! We made turkey meatballs, but as usual decided to add a few non-traditional flavors just becasue we could. Spaghetti with Spinach Pesto and Turkey Meatballs. It’s a little out of the ordinary BUT if you give this a try, I think you just might be pleasantly surprised. Strawberries are everywhere right now and I’m always looking for ways to use them. We’ve already shared a trio of beverage ideas using strawberries: STRAWBERRY MARGARITA GRANITA , STRAWBERRY AGUA FRESCA , and a NUTELLA STRAWBERRY SMOOTHIE. When my friend mentioned to me that she had DEEP FRIED STRAWBERRIES for dessert while dining out the other night I knew immediately I HAD to make them and I’m so happy I did. I went with a more savory batter to compliment the sweet, sweet strawberries and was super pleased with the results. We dipped ours in NUTELLA and the kids enjoyed theirs with a small bit of Hershey’s Chocolate Syrup.
