That last one scares me a little bit. I know I’m 2 weeks late, but here goes, post #1 of 2011: We got a pasta machine and a ravioli tray for Christmas (amongst an array of other kitchen goodies and gadgets). The stuffing is a bit sweet due to the pumpkin, but the bacon counters the smooth sweetness with a nice salty, crispy bite. Xo. Most gawked all-time. One Ordinary Day. Italian Grilled Cheese. It is a very mild Mexican dish, and pretty much fail proof. I don't make it often enough though, specially if you ask my hubby. He would like to have it at least once a week. Our family dinners were usually easy recipes, as both my parents worked out of the home, things that could be prepped and ready in less than an hour. My favorite family meal was a Tex-Mex dish called Cheesy Chicken Enchiladas, that my mom made once or twice a month. From start to finish this dish, paired with rice and re-fried beans, is ready in about an hour. It’s a meal that my brother and I still come home for as often as my mom will make it. Ingredients 12 – small/medium tortillas2 – pounds boneless/skinless chicken breast1 – 10 oz. cans of enchilada sauce1 – packet of taco seasoning1 – package of shredded Mexican Style cheese1/2 – small onion, diced1/4 cup watersour cream (optional)butter/margarinenon-stick cooking sprayfoil.
Fettucine Carbonara with Roasted Tomatoes. I’ve been craving Carbonara for a while now but was having a hard time justifying the calories. The willpower was gone when I thought about throwing in some of the surplus cherry tomatoes from the garden. I also planned to make fresh homemade fettucine but I was too lazy busy to get around to it. Enter Plan B. Go to the store for fresh-ish Buitoni. Fettucine, a pound of dry or a couple of boxes of fresh or your own homemade.Pancetta, 3/4 poundYellow or White Onion, 1 mediumGarlic, 5 or 6 clovesEggs, 3Cream, 1 1/2 cupsFreshly Grated Parmesan, 1 cupCoarse Ground Black PepperCherry Tomatoes, 2 dozen or so Put the water for the fettucine up to boil. Dice the pancetta. Rinse the tomatoes and spread them on a baking pan.
Fry up the pancetta in a large saute pan. While the pancetta is cooking and the tomatoes are broiling, slice the onion and chop the garlic. Whisk together the eggs, cream and cheese. Along with all that stuff, I normally buy an absurd amount of bread that I'm left with the next day. I'm addicted to carbs. Trust me, I'm not complaining about left over bread. I am also addicted to buying jarred antipasto spreads. And, to be honest, if you aren't having a dinner party, just go to the grocery store and grab some antipasto items. Grill it! You can get creative with this sandwich. I put my cast iron skillet on top of the sandwich while I grilled it to give it a good crunchy crust. This sandwich is a winner.
