Most gawked all-time. Death By Oreo Cupcakes. They are probably the best Oreo cakes I have ever tried. A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise.
That's right, you put a whole Oreo at the bottom of the cake. The cookie stays firm, which makes it a little interesting to eat against the soft cake, but it actually gave a really yummy crunch. Overall this is an amazing cake. Preheat oven to 350 degrees. Cream together butter and cream cheese. Foodsnots.com. When I ate eggs, I used to love to make my own mayo – it’s so much fresher and tastier than store bought. Now that I don’t eat eggs anymore, I was at a bit of a loss for how to replace mayonnaise – it’s kind of egg dependent, right? I’m sure Vegenaise is a great product but I try not to buy very many processed foods, vegan or not, so I set out to make my own.
And wow, this was amazing! I honestly did not expect it to work, but it totally did! You just put soy milk (I’m not sure if it works with rice or other ‘milks’ yet, I’ve only tried it with soy so far) and oil (I used canola but you can also use safflower or grapeseed or probably most neutral oils) in a food processor and blend it up. Not only can you customize it by choosing what type of oil you want, but this stuff is way cheaper than the store bought variety. This stuff was amazing on portobello burgers (I’ll be sharing that recipe tomorrow!)
I love when kitchen science works! Vegan, Gluten Free, Raw, Sugar Free Ingredients: VEGAN ready made foods. Chocolate Chip Cookie Dough Ice Cream [Vegan] I’m officially hooked on vegan ice cream. Who knew that a non-dairy treat could be so rich, creamy, and satisfying? Well, I guess Wheeler Del Toro did – and I am forever indebted to him for introducing me to a lower-calorie & lower-fat version of a classic dessert. There are tons of choices when it comes to ice cream flavors, but when a craving for Chocolate Chip Cookie Dough strikes, nothing else will suffice. So when inspiration struck to create a vegan version, I couldn’t get the idea out of my head. The ice cream base itself is reminiscent of cookie dough, thanks to a touch of butter combined with both granulated and brown sugar. As for the actual bits of cookie dough, I chose to create a raw version using cashews, dates, vanilla extract, salt, and chocolate chips.
The raw cookie dough couldn’t be easier to make. Just process raw cashews until ground: Add in plump Medjool dates and process until… … the “dough” sticks together when pinched, like so: Chocolate Chip Cookie Dough Ice Cream.
