Chipotle Sweet Potato Rounds | Make it Naked. So this is it. The last day of our four-day NYE party. I’m not going to say that I saved the best for last but…maybe I did. My dad is close friends with a sweet potato farmer, and somehow I am lucky enough to reap the benefits of this friendship. The last time I was at my dad’s house he gave me about 10lbs of sweet potatoes, and I graciously accepted. I had been taking them to work to eat with a little salt and greek yogurt (a weird but delicious lunch that I love). But did you know if you eat enough sweet potatoes/pumpkins/carrots your hands turn orange? I’m not kidding. I kept it simple. I know some of you may think I’m nuts, but the potato sort of replaces a baguette here.

Chipotle Sweet Potato Rounds (adapted from Martha Stewart Living) Notes: 1. 3. Reuben Grilled Cheese. We’re back after a nice holiday break, and finally ready to start thinking about food again. It’s lovely being cooked for as a guest, but we’ve missed our little galley kitchen and cosy bungalow. We returned from our week-long trip to Minnesota greeted with bright white snow covering the branches of all our trees – winter has finally come to Indianapolis. (Check out scenes from our trip on our Instagram feeds [Sonja or Alex], if you’re interested.) Now that we’re back, we’re pondering 2013 — feeling nostalgiac, but excited for the New Year. 2012 was good to us: an amazing trip across the world, and the cookbook project of a lifetime. We’ve also grown immensely in what we’re looking to do in here this space, our images and recipes finally starting to reflect the vision in our heads. As we ponder 2013, we’re excited about several projects we’ve been kicking about, and whatever new opportunities might await.

And here’s a sandwich — a delicious take on a reuben sandwich sans meat. Roasted Cauliflower & Cheddar Soup | Cauliflower Soup Recipe. Roasted Cauliflower & Cheddar Soup I am lucky Josh likes vegetables since I am a vegetarian. He doesn’t mind if meat doesn’t make an appearance at the dinner table. And if he is in the mood for some meat, he will make it himself to go with whatever we are having. I am also lucky he can cook:) Cauliflower is the one vegetable that Josh can’t stand. I wasn’t expecting Josh to eat this soup, but to my surprise, he said he would try it.

This soup is buttery and creamy…without any butter or cream. This simple soup is perfect for a cold January day. Even if you don’t like cauliflower, you should try this Roasted Cauliflower & Cheddar Soup. Cheesy Vegan Tempeh Slow Cooker Chili – No Pre-Cooking, High Protein, NO Cholesterol and Low Fat. » Florida Coastal Cooking. I was in the break room at work when my friend Heather walked in. I asked her what she was eating and she said chili – she and her partner have cut out meat from their diets so she said they substitute extra tomatoes and love the texture. Slow Cooker Tempeh Chili Hmmm…chili sounds REALLY good right now. Easy Tempeh Slow Cooker Chili I confess – I don’t do much with my slow cooker so I was really excited about taking it out when I decided to do this high protein, low fat tempeh version. Probably the main reason I don’t use it is because many recipes tell me to pre-cook many of the ingredients, so I end up dirtying not only the slow cooker but a pan anyway. No thanks! With this method you just throw the ingredients in, set it and forget it. I do use an immersion blender at the end to give this recipe a creamier texture – but it is not necessary if you like it chunky.

One cup goes a long way because this dish is so filling. Ingredients Directions 1. 2. 3. 4. Butternut Squash and Black Bean Enchilada Skillet. Welcome to 2013! I hope you had a blast ringing in the New Year. I know I did! Now that it’s January, I realize that most of us are now on some fitness or health mission. I really haven’t made any resolutions, other than to never let myself miss out on an experience that I find interesting or challenging.

However, I do think that it’s finally time for me to get back into the swing of things health-wise. Even if I’m eating healthier, I just can’t find a reason why I would give up eating Mexican food. Instead throwing all Mexican food out the window in my quest to eat better, I try and find ways to make it healthier yet still delicious enough to make me daydream about it alllll day long. Butternut Squash and Black Bean Enchiladassssssssssssssssss. Let’s discuss this magical concoction that jumped out of my mind, into the skillet, and down my belly. No, I definitely need to explain how good this dinner is! Seriously. How easy is that?! Make this ASAP. Author: Monique of AmbitiousKitchen.com. Spinach & Mushroom Pita Pizza. Happy 2013, everyone! Did you guys eat as much over the holidays as I did?

Man, it was ridiculous. Between all the parties and family dinners and weddings, I am stuffed to the gills with good food. Cookies, cake, fudge, roasts, steaks, biscuits, pies, potatoes, pasta…the list just went on and on. Everything was fabulously delicious, of course, but there is such a thing as too much of a good thing, and I’m ready to go back to lighter fare. How did this recipe come about? So, I brushed a pita round with a light coating of the robust Extra Virgin Olive Oil, topped it with chopped, sauteed oyster mushrooms and spinach, dotted the whole thing with tangy, creamy goat cheese bits, and stuck everything in the oven. Spinach & Mushroom Pita Pizza Ingredients: 1 6-1/2 inch whole wheat pita round2 cups spinach1 cup mushrooms, chopped (Oyster, portabello…whatever you want. Last week, it was pointed out to me that among the 750 recipes in the archives, there is but a single recipe that utilizes broccoli. Just one! (It’s a great one, though.) For comparison, there are 11 recipes that use cauliflower and 26 with mushrooms. What terrible oversight could have led to this? I buy broccoli (and its friends) approximately once a week, year-round but this wasn’t always the case. Please understand: this is not one of those stories about how preciously advanced my toddler’s tastes are, how early he took an interest in foie gras and how he turns his nose up at white flour pastas, preferring farro. I have a theory that you can tuck almost any finely chopped or shredded vegetable — be it potatoes, zucchini, or an Indian-spiced mix — into a savory pancake, fry it in small mounds until crisp on both sides, serve it with a dollop of a sour cream or yogurt sauce and they will be inhaled. So, you know where this is going. And with that, I had them for lunch instead.

Chicken Tikka Masala with Buttered Naan. I was in India this past summer. It was only a few days but it was as intense as if I spent 2 weeks there. Spending a month in Nepal prior to my travel to India might have had to do something with why I felt I got a bit bigger glimpse of India than I actually did. I can't say I had only good experiences there ( I was alone.

I am a European young girl with blonde hair. You can imagine...) but I did gain several amazing memories. I made some new friends so after all I wasn't all that alone. :) Indian people are extremely nice, I can only speak of one other nationality that is nicer than Indians. Nepalese people. What I loved most about India? So yesterday I had the most amazing idea ever! It is so delicious!! About the naan. If you decided to try chicken tikka masala, then I hope you'll have at least as much fun as I had! Chicken Tikka Masala for the marinade 2 cups plain yogurt 1 lime's juice 2 teaspoons cumin powder 2 teaspoons cinnamon 1 teaspoon cayenne pepper 1 teaspoon ground black pepper. Fancy Grilled Cheese 9 Ways. The cold weather months really put me in the mood for grilled cheese sandwiches and soups. And although Elsie and I are huge fans of a classic and simple grilled cheese sandwich, we thought it would be fun to come up with some variations for a family lunch we hosted over the weekend.

Elsie also brought her panini maker over to my house, it was my first time using one and I've got to say- I'm now a huge fan! We made 9 different grilled cheese variations for our family to choose from, some savory some sweet. My favorite was the tuna with spicy mustard, while our mom favored the apple and provolone. Our flavor variations included: jalapeno peppers and colby jack cheese, bosc pear slices with ricotta and honey, cream cheese (or brie) with raspberry jam, and sour apple with provolone.

Have fun making up your own signature flavor! Cheese Broccoli Soup. It’s that time of year again. The day before the official kickoff to the Christmas season. Well, at least that’s what the news people say. I start getting the Santa spirit the day after Halloween. But that’s just me. This morning, things are off to a great start before the big rush to visit 2 families, one Black Friday extravaganza, two huge football games (LSU/Arkansas and the Iron Bowl—Bama and Auburn), then back home to get our seat belts buckled for an insane month…yes only 5 short weeks…until Christmas.

So far, it’s only 9 am and Stephen has decided to fight with the tree lights. …but decided not to antagonize him. We finally came to rational adult decision. Now, it’s off to Wal-Mart.
