It. is. so. good. I found it last night while searching for a make-ahead recipe for breakfast (I'm trying to get as much done the night before as possible so I can get all my exercising in early....which is a good thing cuz this ain't no diet-friendly recipe!). I started searching Pinterest for overnight breakfasts, but then thought, "Oooh, I bet P-Dub has something good on her site! " I was not disappointed. Grand idea right? Well, I agree wholeheartedly. I tried one recipe and it resulted in a complete disaster. The color wasn’t red, they were IMPOSSIBLE to flip, they were thick, and then fell apart. You Know, The One We Keep In The Mirror. We bring him over to this giant mirror in the hallway and he goes berserk, he paws at the “other” baby, kicks his legs, squeals and laughs. It cracks us up too. Babies: they’re so cute when they’re kinda confused! It took us a few weeks to realize how sad this game actually is. Or more accurately, what I didn’t make: baked eggs and busy stratas and quiche and baked French toast and winter fruit salads and anything involving jam on bread or plates and forks.

It is the result of trying and failing so many times, that I almost declared pancakes as the one breakfast recipe I couldn’t master. But I persisted, and this recipe is perfect – as perfect as a pancakes recipe can be, because making pancakes does involve frying, and frying is something that each of us needs to play with. It changes depending on your type of stove (gas or electric), on how hot the skillet is, and on how evenly hot you manage to keep it while frying multiple batches.
