Top 25 Skinny Recipes 2012. As we come to the year's end, I can't help but reflect on the highs and lows of 2012, and try to imagine what 2013 will bring. Today is a gift we should grasp with both hands, and remember that our faith, family, health, our home sweet homes, and the food on our table are all we really need; everything else in life is a bonus! But looking back, there were lots of Skinnytaste highlights this year, the top of the list was a book deal with Clarkson Potter – woohoo!!! I've been really busy testing new recipes for the cookbook, then comes the photography, book design, cover designs, lots of fun stuff ahead!

I promise to keep you posted as I go through the process. I can't express how grateful and thankful I am for all of your support. I came across this recipe that uses cauliflower instead of potatoes. Hmmm not a big cauliflower fan so I wasn't sure. If there is a choice of either celery or cauliflower in a veggie dish 9 times out of 10 I will choose the celery. BUT I decided to give it a try since the reviews were outstanding. ***BEST MOCK mashed potatoes I have ever had! What you will need: 1 head of cauliflower 1 tablespoon of cream cheese1/4 cup grated Parmesan cheese1/2 teaspoon of minced garlic1/2 teaspoon of salt5 or so dashes of pepperChives for garnish Directions:Wash and cut cauliflower into small pieces.

These were seriously unbelievable! Skinny Enchiladas. My typical Mexican dining experience looks a little like this… First-I stuff my face with so many chips and salsa that I no longer have room for the three chicken and cheese enchilada special I just ordered. And of course I’ve already guzzled three diet cokes. While I haven't spent a lot of money trying to figure it out, I have spent a lot of time! As of today, I've made 15 (yes, fifteen!!!!) Batches of strawberry leather in an effort to perfect the recipe. It's been a frustrating challenge to say the least, especially when making fruit leather seems so easy in principal. I got this recipe from my Aunt Suzy and made a few modifications of my own just to make it just right. It’s soo easy to make! The crunch of the homemade tortilla strips with the zest of the lime gives this dish so much flavor that I think you’ll really love. One bowl of soup is around 135 calories which makes a great healthy meal, not to mention it’s VERY filling!

My favorite combination of ingredients all on one heaping pile of dough. Which also tasted crazy delicious. The great thing about the dough is that you can make it ahead of time and use whenever you’d like.

Cauliflower "Breadsticks" I thought these were interesting when i saw them on tumblr last week i had to make them i love cauliflower and i love breadsticks of course they are low calorie and you get your veggies in too.

I found the recipe on a tumblr called Healthier Every Day. 4 servings (two slices per serving) 95 calories; 6 g carbs; 5 g protein; 4 g fat 1/2 head of cauliflower, grated 1 whole egg, plus one egg white, lightly beaten 1/4 cup 2% shredded mozzarella cheese Dried basil,oregano and parsley 1 teaspoon olive oil Directions: Preheat oven to 350 degrees. Mix all ingredients together (except oil) in a large bowl until evenly distributed. Line a baking sheet with parchment paper and use olive oil to grease the parchment paper.

Spread and flatten the cauliflower mixture on the parchment paper evenly - about 1 inch thick. Bake for 40 minutes until slightly dried out, browning, and firm to the touch.
