Evan's Kitchen Ramblings

pão de queijo is brazilian cheese bun made from tapioca flour (manioc starch). these are gluten-free and by far my utmost favorite snack coz they're so cheesy, chewy and savory! its impossible to just stop at one, two, or even three. i've made these countless times but never got to blog it coz they're just too good to have to wait. best served piping hot, these are dangerously addicting and all too easy to overindulge. so far i've experimented with different recipes, such as one where you just blend everything in a food processor but it was too bland and tasteless for my liking. another one i tried used too much milk and butter and the mixture was so oily you could practically drain the melted butter off when you take them out from the oven. so this recipe by king arthur flour is by far the best i've tried and i'm sticking to it in future! http://bossacafez.blogspot.com/
http://www.food52.com/ Pancakes can be so much more than a short stack with a side of eggs from the local diner. Pull out your skillet and show us your best renditions from around the world: just for starters, think dosas, blini, latkes, crepes, Dutch babies, and banana pancakes too.

I was in Chicago last weekend for the Home and Housewares Show . It was incredible and so fun to come back to the city. I’ve only been one other time and it was very cooold. But thankfully this weekend was filled with unusually warmer weather. http://www.bakerella.com/

Apologies for another long absence here – and thank you so much for all your kind words and prayers on my last post , I’m very grateful for your support. My trip to Japan was a very emotional one, but I’m glad I went back to see what is really happening through my own eyes. It’s already been a year since the earthquake – some things are back to normal, but in most affected parts there are still thousands of people who need both short and long term support. I’m organising a Japan fundraiser at the moment which I’m hoping to launch in April through my blog. It will be a raffle full of wonderful foodie prizes, so stay tuned and I hope many people can help to raise money for those who still need help. Meantime, I’ve been travelling a lot for my work, and there are so many stories that I’d love to share here – hopefully I’ll get back into the habit of posting more regularly this year…
