Day 1 of 12 Days of Christmas Cookies: Cran-Pistachio Cookies

These cookies caught my eye because not only are they different from any other cookie I’ve ever made, they’re green and red…perfect for a Christmas cookie plate. These are easy enough that you could easily whip up a 7-8 dozen for a cookie exchange. Somehow I managed to complicate an easy recipe like this. What should have taken 5 minutes to prepare took…well…way longer.

I accidently bought unshelled pistachio nuts and had to shell a whole bag! Stay tuned for more Christmas cookies and grab a button so you don’t miss out on any cookies. The Motherlode Layered Cookie Bars! Good Thursday folks!

The Motherlode Layered Cookie Bars!

I know this cookie should absolutely be illegal, but let me tell you it is so much fun! Just imagine all of your favorite cookies layered into one bar of fabulousness! Now, don’t go and eat this on a regular basis, but do bring it to your next party or gathering and watch them disappear! At first glance it may look like a lot to prepare, but each cookie dough can be made in under 10 minutes, so don’t be turned off by the steps below.

I like to make the cookie dough in advance and have it in the refrigerator ready to go. See the picture below for all the incredible cookie layers. The Mother Load Layered Cookie Bars Layer 1: Sugar Cookie 1 Roll of Pillsbury Sugar Cookie Dough 1. Coca-Cola Cupcakes. I don’t drink coca-cola.

But I do eat it. Weird. Yeah, I dunno. Fruity Frozen Yogurt. Giant Chocolate-Toffee Cookies. Sugar Cookie Bars. I used to have an obsession with Grandma’s Sugar Cookies.

Sugar Cookie Bars

You know, the giant pink frosted ones. It’s been quite some time since I’ve had one, and recently I’ve been craving that sugary goodness. So when I saw this recipe for sugar cookie bars, I knew I had to make them immediately. Whereas typical sugar cookies require a day’s commitment, to refrigerate, roll, bake, and decorate, the simple act of baking it as a bar cookie simplifies that process immediately. No rolling. The final result, while I wouldn’t say it’s exactly like the Grandma’s cookies (which is probably a good thing – who knows what they put in those things!) So if you are craving a sugar cookie but are too lazy to break out the rolling pin, give these a go. You may also like...
