Lemon Impossible Pie is what we have today for you to enjoy! It’s an incredibly easy recipe and the combination of lemon and coconut is a pure delight! For those who have never tried an Impossible Pie before, you simply must! In a nutshell, it’s an egg custard type mixture with a few additions. When it bakes, it forms its own bottom crust (which has the texture of pastry) and also forms a crisp top crust. Once you’ve baked this pie, it is a good idea to have it chill overnight so it has time to set ready for slicing and also the flavours come together better. CITRUS & TOASTED FENNEL CAKE WITH CRANBERRIES (Gluten-free) SERVES 6-8 2 cups almond flour1 cup sorghum flour1/2 cup brown rice flour1/2 cup tapioca or arrowroot flour1 teaspoon baking powder1/2 teaspoon baking soda1/4 teaspoon freshly ground nutmeg1/2 teaspoon cinnamon3 tablespoons fennel seeds, toasted1/2 cup coconut oil, liquified (if needed, heat over low heat in small saucepan, then cool.)3/4 cup maple syrup3 large eggs1/2 cup vanilla creme fraiche (like, Vermont Creamery's new flavor)2 cups cranberries1 lemon, juice and zest2 satsumas, zest + 2 tablespoons juice (or clementine/navel orange) Preheat oven to 350 degrees.


In a large mixing bowl, whisk together all dry ingredients (first eight listed). Set aside. Add fennel seeds to a dry skillet. In another large bowl, whisk together coconut oil, maple syrup, eggs, and creme fraiche. Lemon-Coconut Cake...Oh, Baby! When it comes to mother-in-laws, I consider myself incredibly lucky.

Thinly slice 1 orange. Add 2 cups of water and 1 cup sugar to a saucepan and bring to a boil. Add the slices of orange, let this return to a boil then turn the heat on low and leave to simmer for 90 minutes. Place some baking paper on the surface to ensure your orange pieces stay immersed in the water. Place 2 oranges in a saucepan, fill with water, making sure to cover the oranges. Preheat the oven to 150°C fan bake. Whisk the eggs, oil, caster sugar and the orange zest together for 5 minutes. Combine the flour, almonds, polenta, baking powder and the salt together. Using a large metal spoon, fold the dry ingredients into the egg mixture along with the orange juice, ensuring there are no pockets of flour in the batter.
