Mingmakescupcakes.yolasite. Caramel Apple Cake. Apples, cinnamon, walnuts, cake, caramel glaze. That’s all I have to say, right? I have you at those four items and hello? This recipe certainly had ME at hello. I found it in the Costco Connection magazine, which just goes to show you that Costco does, indeed, have everything that anyone could possibly want, including a fabulous recipe for a rich, tender, sweet apple cake that will make your whole kitchen smell like a happy autumn day.

I should warn you that like most things associated with Costco, this is not only wonderful but, well, LARGE. Which is not at all a bad thing in terms of making friends…I sent the generous Southern husband into work with a lot of it the next day, and he said it was a big hit. The cake part is lovely — moist and sweet and packed with apples. I know, it’s almost too much to think about without fainting. This weekend, though, I definitely got in the mood to bake, and I thought it would be a GREAT idea to bake cookies for a few special Valentines, which they will be receiving in the mail in a few short days. I was a bit more ambitious than I should have been, making three types (I had it in my mind to make FOUR types, but after 4 hours in the kitchen, rolling out little balls of dough, I surrendered).

My other cookies were just basic oatmeal-with-add-ons, but these sunny lemon cookies — these were something pretty special. I found the recipe for these lemon cookies from one of my favorite blogs, Gimme Some Oven. Sunny Lemon Cookies makes about 40 cookies, depending on size Voila! Like this: Like Loading... Tres Leches Cake. I first made Tres Leches cake about five years ago, when my baby was still a baby and I was trying to find something yummy to make for my friend Ana for her birthday.

Ana’s from Mexico and taught me how to make pico de gallo and guacamole, and I asked her what her favorite kind of cake was. “Tres Leches,” she said in her sweet Spanish accent. “Tres Leches?” I said. “Three milks?” I’d passed high school Spanish. Ana went on to explain to me what Tres Leches Cake is: a light, airy sponge cake soaked with a mixture of three milks: evaporated milk, sweetened condensed milk, and heavy cream. To die for. I did some digging and some reading and wound up making this very cake for Ana’s birthday. Throw flour and baking powder into a mixing bowl… And add a little salt. Now, separate 5 eggs. Whites in the other. Now, throw the yolks and some sugar in the bowl of an electric mixer. Mix on high until the yolks are pale yellow in color and doubled in volume. Next add 1/3 cup of whole milk… Now QUICK!

Homemade Girl Scout Cookies: Samoas. Samoas, also known as Caramel de-Lites, have always been my favorite girl scout cookie (although I do enjoy Do-Si-Dos, Tagalongs and Thin Mints). I’m not sure how they rank in the overall scheme of GS cookie popularity, but I will go so far as to say that I have never met someone who didn’t care for them at all – even people who say that they usually don’t like coconut.

I think that the cookie is just a good and rather unique combination of flavors. The Girl Scout bakeries describe Samoas as vanilla cookies dipped in caramel, topped with coconut and drizzled with chocolate. All good flavors, though I have to admit that I never tasted much vanilla in the cookies themselves, and so I used this description as a jumping off point for my version. I remember the cookies as being crisp and tender in the original, and selected a plain shortbread-like base for these. For the topping, I debated between using a from-scratch recipe like Chockylit‘s or a semi-homemade recipe like Debbie‘s. Impossible Pie recipe.
