Every year since we moved into our house 8 years ago, the raspberry patch would start giving us a handful of ripe juicy berries just a few days before the 4th of July. But with 2012′s odd and early spring, everything has shown up a couple weeks sooner than expected. And the raspberries followed suit. Before we had even flipped the calendar to July, we had already filled many a bucket with fresh raspberries from our garden.
The berries have been bigger and better than normal this year. And we are reveling in every last juicy red bite! With the heat and oppressive humidity we’ve been experiencing the past week, this Frozen White Chocolate & Raspberry Dessert is a welcome sight. It’s built on a salty crumbly pretzel crust, which our oldest daughter thinks must be the very foundation of heaven. As a kid, I couldn’t get enough sugar, and sugar in chocolate form was (and still usually is) my sugar-high of choice. This recipe was in one of Mom’s favorite cookbooks, so I gave it a go and never stopped making them.
In fact, the frosting was so delicious that I would secretly make batches of it and hide in the bathroom (the only rooms with locks on them) to eat it by myself–a major feat with 8 people in the house. This reminds me of Mary going to the Dairy Queen with Mom to get Buster Bars for everyone. She had eaten hers on the ride home, and asked, in all sincerity, if they could just sit at the bottom of the driveway and eat them all and pretend they’d never gone to the DQ.
Once, I made the frosting and was rudely interrupted while attempting to consume it. I haven’t had these in a long time. And yes, it's light too! The blueberries are the star of this cake, and I didn't think it needed any frosting. I simply topped it with a little powdered sugar before serving (completely optional) or you can even serve it with some whipped topping (or Greek yogurt) on the side. I took a poll on the Skinnytaste Facebook fan page and asked what kind of baker you are, one who bakes from scratch or one who prefers quick recipes using a box cake as an ingredient, and the overwhelming response was you all like to bake from scratch! All you Americans out there, especially all those who live in San Francisco, have you been to Tartine? I have been to SF.
And the most heartbreaking thing for me is that (as it was pre my “all I want to do is bake” days) I didn’t go to Tartine. I went to some fantastic places like Nopa and Dottie Blue’s, but I was yet to hear about Tartine at that point. It just means I am going to have to go back to SF and visit, because I have heard amazing things about the bakery! I first heard about Tartine maybe a year and a half ago, when I read about their morning buns and gave the recipe a try. I was so excited when it came that I marked all the things I wanted to make from it and baked a couple of things straight away and then sort of… forgot about it. Anyway, we have a a bread class at culinary school, and our chef loves his sourdough and did a course in SF. And he was right, they were fantastic.
