Zucchini and Eggplant Casserole « PDXfoodlove. I say this a lot, but I always mean it. I am sad that this casserole is gone. But it’s gone because I ate it all up. And the point wasn’t to have it sit in the fridge, I suppose. Maybe I should think about food less. Ha. This meal continues a pretty long streak of eating very little meat. It’s not intentional. It also happens to be gluten free. This is based on a recipe from Oh She Glows but I destroyed its vegan-ness. 2 eggplants, sliced at 1/4 inch thickness2 medium zucchini, sliced at 1/4 inch thickness1 cup tomato sauceAbout a half pound of fresh mozzarella, sliced1 cup spinach1 can Great Northern beans5-8 large basil leaves2 tbsp. olive oilLarge pinch kosher salt I really liked Oh She Glows’s idea for baking the eggplant a little bit first – basically she bakes it at 450 until it shrivels a bit.

There are lots of ways to make mashed potatoes. Some are die hard mashers, others use a food mill and some use a hand blender to whip them. We love all three. Seriously, we do them all. With that said, when we want the lightest, creamiest potatoes we use a hand blender and make whipped potatoes. They’re really simple to make. Boil your potatoes (we love using Yukon Gold potatoes for this). Then, drain and break the potatoes up a little with the ends of the whisks. What Else Can You Add to Whipped Potatoes? We love our addition of creamy mascarpone cheese (very similar to cream cheese) and chives to our whipped potatoes, but there are so many options.

It has always been delicious and I've always wanted to prepare it at home. Serving soup in a bread pots is a perfect way to indulge yourself after winter outdoor activities.
And the best part - once you're finished with the meal, there are no dishes to wash;) I prepared the bread bowls using a bread recipe from my mom's journals, cutting the products in half to get 4 servings. To prepare the dough, sift the flour. When the dough doubles its size, knead again.
