Linguine with Asparagus and Egg. Twice-Baked Potato Casserole Recipe. Honey Mustard Chicken Recipe. Print Photography Credit: Elise Bauer This is one of those lazy days, couldn’t be easier, don’t have to think about it and it still turns out great, dishes. You just mix honey, Dijon mustard, and olive oil together and pour it over chicken thighs in a casserole dish and bake until done. The chicken produces its own gravy with the honey and mustard, and the skin on the top gets crispy brown. We have lots of rosemary in the garden; adding a sprig or two takes the dish up a notch. The chicken is great served with rice to soak up the honey mustard gravy. Do you have a favorite lazy day chicken recipe? Jenna's Journey: Chicken Roll Ups. I have a great, easy and delicious new recipe to share with you! One of my favorite things to do in my limited free time is to search food blogs and food websites. I kept seeing recipes similar to the one I'm going to share but I didn't like half of the ingredients, and the ones I did like, Chris didn't. So here's my version of Chicken Roll Ups! First, I boiled 2 chicken breasts.

Meanwhile, I let a block of cream cheese thaw out. I mixed the cream cheese with 1 1/2 cups of cheddar and 1 cup of Monterey jack and some salt and pepper. Once the chicken was cooked, Chris shredded it for me with his hands of steel, and we mixed it into the cheese mixture. Then I put the mixture on big, buttery, flakey crescent rolls. And rolled them up. Finally, bake them at 350 for 20-25 minutes! Combine chicken, cheeses, salt and pepper. Be sure to check out my other great chicken recipes too! Cheesy Chicken Spaghetti. Have a wonderful weekend! Roasted Parmesan Sweet Potatoes — Teenie Cakes. My mom occasionally baked sweet potatoes when making a roast. My sisters, brother and I wouldn’t touch it, so my parents happily enjoyed these tuberous roots to themselves.

Come to think of it, they never really insisted or enforced that we partake in its consumption and happily enjoyed it for themselves. So all these years later, I’ve decided to give sweet potatoes (also sometimes mistakenly referred to as yams in the United States) another try. These colorful roots boast some impressive health benefits. They are sweet, and I admit…took some getting used to because my mind stubbornly held that they looked like potatoes, but didn’t taste like potatoes.

Serving these roasted Parmesan sweet potatoes alongside some BLTs with avocado proved to be a complimentary combination. “Bourbon chicken? Bourbon chicken? Sample?” You know those food court Chinese places that you pass in the mall that shove chicken on a toothpick in your face and practically force you try it even if it’s like 10am. Update: 7/24/2012: Yes, you may use boneless, skinless, chicken breasts instead of thighs. I won’t lie, it’s hard to refuse something like that. However, it’s not “real” Chinese food and I don’t like that they broadcast it like it is. Anyway, enough of my hating because we all know how obsessed I am with that stuff and as far from Chinese as it may be, I still get it whenever I go to Panda Express or am grabbing a quick bite at the food court. On Sunday, my husband decided he wanted me to pick up some fish at the grocery store for dinner that night. Now, I am not the world’s biggest fish fan. I can tolerate it in some cases, but most types of fish are unappealing to me (with the exception of shellfish, which I love – our collective love of shrimp is well-documented on this blog). So, I figured that I would just thaw out some frozen shrimp for myself, whip up a fun marinade, and call it dinner. For some reason, the thought of honey lime shrimp popped into my head – so, I made up a quick marinade, let the shrimp hang out in it for about 30 minutes, and ended up with a delicious meal!

Moroccan Recipe: Chicken Tagine with Apricots, Almonds & Chickpeas Recipes from The Kitchn. If you don't own a tagine, don't fret. You can use a Dutch oven, as I do, or any other heavy cooking pot with a tight-fitting lid. Cook's Illustrated has performed various cooking tests and confirmed that, although the conical tagine makes a particularly striking table presentation, stews cooked in other cooking pots tasted equally delicious.

This is not a quick weeknight meal, by any means, but it is most certainly a lazy "make your house smell amazing" weekend kind of meal. It also makes terrific leftovers, so even if you aren't throwing a dinner party or making Sunday dinner for your family, it's worth making this for the meals it will give you all week long. Chicken Tagine with Apricots, Almonds & Chickpeas Serves 6 to 8 Warm one tablespoon of oil in a large Dutch oven (at least 5 1/2-quarts) or tagine over medium-high heat until the oil flows easily and you can see it shimmering. Pour off all but a teaspoon of oil and return the pan to medium heat. Notes: Appetizers. This week has been such a mess! I can't wait for next week for a total do over! I have so much to accomplish this weekend - thank goodness it's a 3day weekend! Any fun plans you guys have for the extra time?
