Meanwhile, heat a medium pan or skillet over medium-high heat. Add olive oil, chicken, salt and pepper. Cook and stir for 7 to 10 minutes or until chicken is cooked through. Turn off heat and set aside. Cook pasta according to package directions, adding broccoli for the last 3 minutes. While pasta cooks, heat a medium saucepan over medium heat. The first players up are: a few Russet potatoes (I’m sure other varieties will work equally as well), Parmigiano-Reggiano and butter. Start by scrubbing your potatoes good and clean. Then, using a sharp knife, make slices across the potato, being sure to stop before you reach its bottom.
