My Favorite Easy Salad. Winter solstice salad - Clean Food Dirty City. I love this raw salad for winter.
The base is composed of massaged veggies (yes, you can massage brussels sprouts, too!) , which makes it an easier-to-digest salad during the colder months. I can grab most of the ingredients at my local farmer’s market, and quickly pull together a tangy dressing using tamari and Sir Kensington’s dijon mustard. Method In a small bowl or jar, combine all the ingredients for the tamari-dijon dressing. Start with the brussel sprouts. Wash and dry the kale well. Pour a tablespoon or so of dressing onto the brussels and kale mixture, and use your (clean!) Slice the radishes and scallion, and use a peeler to shave the carrots and golden beets. Roasted radishes and salad turnips with pesto. All weekend, I ignored work.
My normal work anyway. Instead of the usual internet this and that, I went with Brian and the girls to a Friday night cookout, then a Saturday dinner with friends. In selecting radish and turnip bunches for the recipe, look for small to medium roots and robust green leaves. I made this recipe vegan, and it’s very good as is, but if you’d like a little more heft, consider adding a handful of grated Parmesan to the pesto for added creaminess and depth of flavor.
