A Two Bite Breakfast: Bacon & Eggs in Toast Cups. * Updated post from archive: Originally posted March 29, 2009 If you where to ask me what is my favorite meal of the day without a thought my response would be breakfast! I love breakfast! I love brunch! I love bacon! I love breggs! These little goodies are all of the above in a little two bite package. The other day I was scanning through my copy of William & Sonoma’s: Tools and Techniques. And, they are crazy easy to make. Pre-heat the oven to 400 degrees. Trim the crust and the corners off the bread, making wonky looking circles.

Line a sheet pan with parchment paper and lay the bacon strips on it. Shape the cooled bacon into the toast cups, with the meaty side out. Also, if you aren’t a fan of creamy delicious runny eggs you can beat 4 eggs with a bit of milk, season and spoon into the cups. Lower the temperature of the oven down to 350 degrees. Run a knife along the edges and use a small spoon to pop them out.

Let me just ask you this: have you ever had a muffin melt in your mouth? French Breakfast Muffins I never knew a muffin could be so exciting. 1/3 c. butter, melted1/2 c. sugar1 egg (preferably room temperature)1 1/2 c. all purpose flour1 1/2 tsp. baking powder1/2 tsp. salt1/4 tsp. nutmeg1/2 c. milk Topping (option: cut topping in half*)1/2 c. sugar1/2 c. butter, melted1 tsp. cinnamon Preheat oven to 350F.

In a medium-large bowl, sift together all dry ingredients. For the topping, mix sugar and cinnamon in a small bowl. Make-Ahead Muffin Melts. This is another recipe from my mother’s recipe collection. It’s a make-ahead concoction meant to be spread on English muffins and broiled. And it’s just…it’s just… It’s divine. And here’s what you need. Sorry about the excessive bokeh. Start by peeling all the eggs… Then give ‘em a rough chop. Throw the bacon on a cutting board, trying not to eat it all in the process… Then chop it up into bits…trying not to eat it all in the process.

Throw the eggs in a bowl… Then throw in the shredded cheddar. I’ve been grating cheese in my food processor lately and I have to say, I’ve never been happier in my life. Then comes the bacon and a cup of mayo. Now hear this! A good, heaping tablespoon of Dijon. Do not skip this ingredient or your life will spiral downward into a series of unfortunate events. I’m not even kidding. Next comes some garlic powder. You think I’m kidding, but I’m not. Finally, two or three good dashes of Worcestershire sauce. Again, don’t skip. You can make this the night before. *Burp* GET OFF YOUR BUTT AND BAKE!: SCRUMPTIOUS FRENCH TOAST. If you ask my kids, they will tell you that I'm not a lover of french toast. My husband likes it however, and so I made it this morning. This is actually very good, and the recipe I will use, from here on out!

Ingredients: 8 thick slices white bread 4 eggs 1 cup heavy cream ¼ cup honey (heated in the microwave until runny) ½ teaspoon salt 1 teaspoon ground cinnamon 2 Tablespoons grated orange zest 1 teaspoon vanilla extract ¼ cup butter Directions: In a medium bowl, beat together, eggs, cream, honey, salt, cinnamon, orange zest and vanilla extract. On a griddle melt butter over medium high heat. Banana Nut Pancakes. Banana lovers will love these low fat pancakes. The flavor of banana nut bread in a pancake, made with whole wheat flour, potassium rich bananas and fiber rich walnuts, which are also high in omega 3 fatty acids.

Delicious topped with agave or maple syrup (extra points). I've included the points with and without the nuts. Heat a large skillet on medium heat. Asparagus and Swiss Cheese Frittata. Spring asparagus, shallots and Swiss cheese is a delicious combination in this slimmed down frittata which is perfect for breakfast, lunch or dinner! This is really filling, and the leftovers for perfect for lunch or breakfast the next day. Fritattas are also great if you're watching your carbs, and they are so inexpensive to make. I love having a Fritatta for Meatless Mondays with salad on the side.

Whenever asparagus is in season, I buy it and steam it right away to use for quick recipes throughout the week. It's great to add to eggs, salads, served chilled with a simple Dijon Vinaigrette or even to add to paninis (LOVE this asparagus prosciutto panini)! Asparagus is loaded with nutrients, it's a great source of fiber, vitamin A and C, and it's packed with antioxidants, which makes it a super star in my book!

Ingredients: Steam asparagus crisp and tender, about 3 to 4 minutes. Preheat oven to 350°F. In a medium bowl whisk eggs, egg whites, grated cheese, milk, salt, and pepper. Guiltless Egg and Bacon Sandwich. Caramelized Onion, Red Pepper and Zucchini Frittata. Caramelized onions, sauteed bell peppers and zucchini combined create a winning egg dish. Frittatas are very versatile, they can be eaten for breakfast, lunch or dinner if paired with a salad. Cut into small squares, they can be served as an appetizer as well. This starts on the stove and finishes in the oven. I like to use half eggs, half egg whites to lighten my frittatas yet maintain the taste and texture I prefer and keep the vitamins, iron and nutrients, but if you wish to use all egg whites, that would certainly work.
