Lemon Chia Seed Pancakes + Weekly Menu. The most productive thing I did today was make brunch. Easter requires brunch, correct? Totally. Mr. Prevention started his morning with a pack of Poptarts. The evening was spent grilling burgers because who doesn’t eat burgers on Easter? While he pops some popcorn for movie time, I’ll probably nibble on another Lemon Chia Seed Pancake…because super healthy-for-you food is rarely this delicious. Today I’m using two kinds of cornmeal, a finely ground cornmeal and a coarse ground polenta style or grits. Toasting cornmeal is simple. Once the cornmeal is all nice and toasty, add it into a bowl with a cup of all purpose flour… 1-1/2 teaspoon baking powder, 1/2 teaspoon of baking soda and a 1/2 teaspoon of kosher salt. Whisk to combine and scoot that off to the side for a moment. In a separate bowl, crack in one egg. And 1-3/4 cup of buttermilk. Enjoy! Baked Cheesy Omelet.
