So I did mention something about health and/or diet food in my last post, and while this recipe is the latter, it is most certainly not to be confused with the former. I posted about my rainbow cake here, and it got a lot of traffic on over to my livejournal, and everyone wanted the “recipe.” The cool thing is that if you’re making something so distractingly colourful, people will think it’s delicious no matter what. This presents me with the option to use an old Weight Watchers trick—the one-point cupcake. Except I’m making a cake and I created my own frosting. This cake is suitable for many occasions: . . . so I’m sure you’ll find a use for this recipe soon.

A lot of cake's that I have experimented with before are like a vanilla cake with bits of Oreo in them, which didn't really give them enough Oreo flavor. But these were a lot better. I used a dark chocolate fudge cake mix instead of just a regular chocolate cake mix, which went really well with the cookies and gave the cakes just a little more flavor. So, in this recipe there is Oreo's in the cake, in the frosting, and at the bottom is a Oreo surprise. That's right, you put a whole Oreo at the bottom of the cake. Ingredients 1 package Oreo Cookies, regular size 1 package Mini Oreo Cookies, for decoration (optional) 1 package chocolate cake mix (mix according to directions on box) 8 ounces cream cheese, room temperature 1/2 cup butter (1 stick), room temperature 3 3/4 cups powdered sugar 1 teaspoon vanilla extract cupcake liners Preheat oven to 350 degrees.

You may have noticed that I have been in a s'mores kick lately. First with the cookie dough pops, then with these cookies. I also plan to make additional s'mores themed treats this weekend. I saw a version of s'mores cookies on Make and Bake and became immediately intrigued. I knew I had to try to make these...the sooner the better. I am convinced peanut butter and chocolate were made for each other, like Charlie and Claire on LOST–I’m only on Season 2 right now but someone please tell me they have gotten together. I find that a lot of my baked creations involve these two perfect ingredients because they are two of my favorite foods…they actually might be my MOST favorite foods. I know, big statement. They’re called Slutty Brownies because they’re oh so easy, and more than a little bit filthy. They’re best served warm from the oven, with good quality vanilla ice cream (devastatingly I didn’t have any in the freezer this time, so I guess I’ll just have to make them again). They take about 45mins to make, including baking time.

You will need… 1 Box of cookie mix, 1 Box of brownie mix, 2 Eggs, 2 Packs of Oreos (double stuffed ones are even better if you can find them) Some oil & your favourite ice-cream (optional) Preheat your oven to 350F, 180C, gas mark 4.
