I often find myself browsing it when trying to think of interesting food ideas that my children might really enjoy. Recently, I came across a wonderful recipe for zucchini and quinoa lasagna there, one that I immediately wanted to try. After a few little modifications, that’s exactly what we did – and it was a big hit with my family. What You Need Here’s what you need to pull off this recipe. 2 large zucchini, cut into 12 thin, 1/4 in. thick slices salt 1 cup dry quinoa 2 cups vegetable stock or broth or water (you really can make your own stock) 1/2 cup tomato sauce 1/3 cup onion, minced 1 teaspoon dried oregano 1/4 cup fresh basil, chopped 2 tablespoons fresh parsley, chopped 2 tablespoons cream cheese (we usually use a non-dairy type) salt and pepper to taste 2 cups marinara sauce 1/2 cup shredded Mozzarella cheese (we often use non-dairy Daiya) Preparing the Meal.
