Roasted Smashed Potatoes
Why this recipe works: Crispy smashed potatoes are the best of both worlds, delivering mashed potato creaminess with the crackling crisp crust of roasted potatoes. The technique looked simple and straightforward. Skin-on spuds are parcooked in seasoned water, drained, and squashed just shy of an inch thick. Then the potatoes are oiled, and cooked hot enough (either panfried on the stovetop or spread out on a baking sheet in the oven) to render the roughened edges and torn skin browned and crispy and the interior flesh creamy and sweet. There's nothing I would rather be doing more than sleeping right now. Aside from going to bed later than usual, I was woken up at the crack of dawn by a bevy of sirens, only to discover that the apartment complex across the street caught fire. It caused my entire neighborhood to lose any hope of rest we may gotten thereafter...When thinking of Super Bowl foods strawberries don't usually make the cut. However... mix the strawberries with a little tequila and turn them into a margarita and you are getting closer! With our sunny Citrus Blush already mixed and in the pitcher we weren't really in need of another cocktail, but when I came across these cute little shots I couldn't resist putting them on my Super Bowl Extravaganza Table. Hollowed out strawberries work as a vehicle for a Jell-0 concoction of strawberry gelatin, tequila and a touch of Grand Marnier. Garnished with cute little wedges of lime these little shots are absolutely adorable! Strawberry season here in San Diego is a tad behind schedule and I had a bit of trouble finding those beautiful, plump and bright red berries, but we made do with the Farmer's Market offerings and found some that were good enough.

I wanted to make something to take on the road, but the contents of the refrigerator were saying PIZZA. Hmmm... pizza is not so portable. Then I remembered CALZONE! Calzone is basically the same as pizza but with a much prettier appearance. If you want to impress your family, make your regular pizza into a calzone, and watch them "ooh and ahh."potato pancakes, even better

One day a few weeks ago, she dropped by my office to tell me about a recipe she’d found – pizza crust made of cauliflower! Yes, it sounded a little strange, but I was definitely intrigued. Since she’s a culinary school graduate and enjoys food as much I do, I trust her judgement and wanted to try it. I'm a pepperoni girl, so of course I had to have that, but the topping options are endless here. Admittedly, this is not a pizza in the truest sense of the word, but if you'd like pizza flavors with a "crust" that's gluten-free, low-glycemic, and low-carb, this is an idea you may end up liking just as much as I did! I used an over-sized 8-Ball zucchini to make my pizza, but any large zucchini could be used here.
