Blueberry Cake Recipe

Butter, or spray with a nonstick vegetable spray, an 8 inch (20 cm) square baking pan. Streusel Topping: In a large bowl, mix together the flour, sugar, and ground cinnamon. With a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture, until it resembles coarse crumbs. Set aside while you make the cake batter. Cake Batter: In a separate bowl whisk together the flour with the baking powder and salt.

In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth. Evenly arrange the blueberries on top of the cake batter and then sprinkle with the streusel topping. Bake for about 40 - 50 minutes or until a toothpick inserted in the center of the cake comes out clean and the cake just starts to pull away from the sides of the pan. Serve warm, at room temperature, or even cold. Makes about 9 servings. View comments on this recipe on YouTube. Lemon Pound Cake and The Fairy Hobmother. This lemony pound cake is easy to whip up and tastes especially delicious topped with strawberries soaked in sugar and a bit of cointreau or grand marnier over night.

Lemon Pound Cake and The Fairy Hobmother

The cake is dense, moist, and sweet enough to serve for dessert but fruity enough to have for breakfast with a cup of tea. I baked mine in a loaf pan and after it had cooled (and after I had tried a slice) I drizzled it with a glaze made from lemon juice, powdered sugar, and a bit of whipping cream. Yum! It travels well so we took it on our picnic and I can see it taking it for bbqs or other outdoor summer gatherings Since it's dense it holds up to being topped with strawberries and their syrup. Another great use for the summer strawberries that are in season right now. Pretty soon I'll be making and canning strawberry jam thanks to a gift given to me by the Fairy Hobmother. It sort of sounded too good to be true, but I wrote down a wish for a big canning pot anyways so that I wouldn't have to can in such small batches. 1. 2.

Monday Morning Mmmm: Pink Lemonade Cake — Giving Up on Perfect. Gluten Free Pink Lemonade Cupcakes. It is almost Spring Break time which means my normally sleepy little Florida beach town will get inundated with visitors – “spirited” collage students will wonder the streets, alabaster-skinned families from Minnesota will turn bright red on our beaches and most importantly, my g-kids arrive!

Gluten Free Pink Lemonade Cupcakes

Whenever the g-kids come they always cook up ideas for money making ventures and inevitably they want to have a Lemonade stand. Unfortunately all attempts at selling glasses of freshly squeezed Lemonade for 50 cents have been fiscal failures. What has been successful for them is baking gluten-free baked goods and selling them at business offices. So this year I thought of a way I could help them combine both – Gluten Free Pink Lemonade Cupcakes!

The cupcakes are light as air, the frosting sweet and pink and overall these gluten-free cupcakes are just as cute as could be – topped with a sugared lemon slice and a bright red maraschino cherry. Now…at the wedding reception, the limes and lemons in the tall vases were fun and whimsical and colorful, but after the bride and groom drove away, those of us who WEREN’T going on a fun, relaxing honeymoon had to figure out what to do with literally hundreds of limes and lemons.

Lemon Cupcakes

My mother-in-law tried VERY hard to get me to throw some into my suitcase, which I adamantly refused to do because a) I didn’t want unsweetened lemonade all over my clothes when we got home and b) now that the airlines so graciously allow us to pay for checked baggage, I figured I could buy my own dang lemons for another $25. Well, being the mother of seven boys that she is, she was not about to let me go home citrus-free, which led to quite a bit of back-and-forth banter. Finally, I remembered that I had this recipe scheduled for today and told her I would take home a carry-on bag full of lemons and limes, which she was delighted to hear.
