French Garlic Soup

I found this healthy French garlic soup in the Larousse de la cuisine des familles, presented as a family recipe from a Provence mama. Wicked way of roasting whole garlic heads. Black Pepper-Garlic Chicken. Here's one on my favorite Stir-fry recipes, inspired by Black Pepper Chicken served at Panda Express Restaurants.

The savory sauce took a bit of tinkering, but I think this copycat version is really close... and it's delicious, too! Please... don't forget to start this recipe with Velveted Chicken. It's a very simple technique that'll turn any Chicken Stir-fry into a mouth-watering Asian masterpiece! Ingredients: 1 lb. Stir all of the sauce ingredients together in a small bowl, allowing about 10-15 minutes for the flavors to mingle/mature while you slice the vegetables. Stir-fry: Creamy Caprese Pasta. Sigh.

I opened the fridge, pulled out all the veggis I had, chopped them up and came up with this soup. I actually really enjoyed it. So did my hubby and boys. For anyone that uses pressure cookers, this soup is a breeze. Stick those frozen chicken breasts from Costco in the pressure cooker and 15 minutes later they are ready to shred. Hope you all enjoy. I was ready for a little change! Phew, what a crazy week I’m having. Busy Busy Busy, but somehow I seem to always manage to cook! Yesterday I was on AZ Midday, demonstrating a mac and cheese recipe, which is a news type show where there are all sorts of guests. My “Comfort Foods” show comes on Food Network this Sunday night, so Food Network has been setting some of the finalists up with news shows, newspaper articles etc… Long story short, while I was doing my demo yesterday, I didn’t have time to add the chicken mixture to the mac and cheese, so I brought it home and here it is in these yummy taquitos. You can certainly bake these instead of frying them in a skillet like I did, whatever you are in the mood for.

A Little Good Competition… For anyone who saw the competition last night, knows my mac didn’t take home the big prize, but I must say, this is by far my favorite mac and cheese recipe.

Nothing fancy, just flat out delicious, and hey, it made it on Food Network! My family loves this! It was fun to see my husband and son in the front row cheering me on, priceless actually. It really was a great time in LA, meeting all of the other finalists and participating in the competition. It was very game show like and brutal watching those judges! My Spoiled Little Campers….. Ever had a Hobo or Tin Foil Dinner? I’m not a huge fan of camping, but these dinners are worth it! My husband and boys are getting ready for their annual Father and Son’s Camping trip they go on with our church. The boys get so excited. Good Tuesday friends! What a whirlwind the last week or so has been. We’ve been traveling back and forth to AZ for Thanksgiving and just got back a couple days ago. Had the best time being with our family. Now Christmas is in full swing! Managed to get the house decorated yesterday, feels nice and festive I don’t know about you guys, but getting dinner on the table these days is rough with everything else going on. Broccoli Cheddar, Chicken and Tater Tot Casserole 2 small cans cream of chicken soup 2 small cans cheddar cheese soup 1 1/2 Cups milk 8-10 Cups broccoli florets 2 large boneless skinless chicken breasts, cooked and shredded (bake or I throw mine in the pressure cooker) 1 teaspoon hot sauce (Tabasco or Chalula) 1/2 teaspoon kosher salt 1/4 teaspoon fresh cracked black pepper.
