If you’re unfamiliar with naan, it is basically just an Indian style flat bread. Okay, maybe it’s not “just” flat bread. This stuff is AMAZING. It is soft, pillowy, full of lovely bubbles and so extremely versatile. You can eat this along side of a meal to sop up gravies and juices, you can make flat bread sandwiches with it, top it with tomato sauce and cheese for a quick personal pizza, use it in place of tortillas for quesadillas… the possibilities are endless!! This recipe is so quick, easy and delicious that it is most definitely my new favorite yeast bread recipe.

I’ve used the veggies my family likes best, but feel free to swap them out for the ones you prefer. Pretty much anything works! I'm making that claim and I'm sticking with it. This IS the BEST cauliflower pizza crust you will ever make. I've worked out the kinks from my previous cauliflower crust and from all other cauliflower crust posts I've read, and I'm confident that this pizza, this very one here, with a crust made out of a vegetable, is so damn delicious that you won't even think twice about the whole crust being made out of a vegetable thing. And yes, you can slice it and pick it up like a real piece of pizza.

Here’s a recipe you are definitely going to want to add to the weekend mornings breakfast rotation. I think I could probably eat the entire batch of pancakes by myself =). They really do taste just like fluffy, sweetly spiced carrot cake, especially when they are smothered with Vanilla Cream or Cream Cheese Syrup. My obvious inspiration for these was the real thing, and I looked to my favorite carrot cake recipe to create this one. If you were wondering why I decided to soak the carrots overnight with the buttermilk and sugar, it’s because I wanted to give the carrots a head start softening and I thought adding the sugar would help draw some of the natural sugars out of the carrots (but really what do I know, I just experiment and if it tastes good then something scientifically genius must have happened =).

But this weekend we re-imagined it as a healthy, whole grain pancake breakfast, with bonus points for getting our 4 year-old to eat veggies before noon. Flecks of carrot lend an earthy sweetness, while cinnamon and ginger add a beguiling aroma. Made with fresh sweet carrots, and served with a pat of butter and real maple syrup, these healthy pancakes are a great way to usher in the fall.

Healthy Carrot Cake Pancakes (adapted from Cooking Light)serves 3 or 4 1 1/4 cups whole wheat pastry flour 2 teaspoons baking powder 1 tablespoon ground ginger 1 teaspoon cinnamon 1/2 teaspoon salt 2 eggs 3/4 cup yogurt 1/3 cup honey 2 tablespoons butter, melted and cooled, plus more for cooking 2 tablespoons orange zest 2 cups carrots, peeled and shredded.
