Peanut Butter Chocolate Pie for Pi Day

Please see my disclosure policy for more information. You are going to HATE me for this, but you know what’s been going through my head all day today? Imagine this little ditty, if you will, sung to the tune of Rebecca Black’s “Friday”: “It’s Pi Day, Pi Day, gotta eat pie on Pi Day, everybody’s looking forward to eating, eating. Eating pie, eating pie, yeah! You’re welcome. Horrible earworms aside, isn’t Pi Day a fabulous idea? I actually made two pies for Pi Day, but I’ll be posting them separately for maximum Rebecca Black quoting opportunities. The whole thing was delicious, but the real star was the light, silky peanut butter layer.

Be warned that this pie is INTENSE. . 🥜 More Peanut Recipes You’ll Love Peanut Butter Chocolate Pie This Peanut Butter Chocolate Pie has a chocolate cookie crust, a thin layer of chocolate ganache, and a thick layer of peanut butter mousse. Snickers Cake. This creamy no-bake Snickers cake is stacked with creamy layers of homemade chocolate and peanut butter pudding along with some graham crackers softened to a cake like texture.

Draping the mad goodness of the creamy layers is a heavy pouring of caramel and chocolate ganache sauce. Of course I can never just stop at good enough, I had to take it over the top and chop up some Snickers for added authenticity and then finish that off with some caramel and chocolate drizzle. It’s cakery for the lazy. I love icebox cakes because they require no baking and always seem so much easier. But you know what is not easier, making nice even layers. These days I don’t have time to practice that. I should stop now – I’m being a whiner. Okay, one last thing, that second picture is admittedly hideous.

Slutty Brownies

I know, big statement. They’re called Slutty Brownies because they’re oh so easy, and more than a little bit filthy. They’re best served warm from the oven, with good quality vanilla ice cream (devastatingly I didn’t have any in the freezer this time, so I guess I’ll just have to make them again). They take about 45mins to make, including baking time. The ultimate comfort food, whipped up within the hour. You will need… 1 Box of cookie mix, 1 Box of brownie mix, 2 Eggs, 2 Packs of Oreos (double stuffed ones are even better if you can find them) Some oil & your favourite ice-cream (optional) Preheat your oven to 350F, 180C, gas mark 4.

Line a baking tray with grease proof paper. Squidge (technical term) the cookie dough into a lined baking tray, until it covers the bottom. Cover this layer with your Oreos. Mix up your brownie batter. Ice cream cookie bars.
