When we were still living in Tuscon, AZ, we had a Safeway down the street (okay, so down the street equals 3 miles away) that had a deli section that made their own sandwiches.

My husband got one after a warm summer day and was hooked. It is such a refreshing sandwich, crisp and clean tasting. We take the ingredients with us when we go camping, all you need is a little cooler. What I like even more is the fact that all sorts of lonely vegetables from the back of the fridge can be used: I can imagine parsnips, sweet potato, zucchini, bell peppers, kohlrabi or broccoli in this.

I like these falafels with a thinned and seasoned tahini sauce and a fresh salad on the side. (Print Recipe) 2 tablespoons flax meal 6 tablespoons boiling water 1/2 cup almond meal. Soufflés de blida.
