Silky, savory Asian-style steamed eggs are a real treat at any meal. Different variations exist in China, Japan, and Korea, and today I'll share one method for making Korean-style steamed eggs, called gyeran jjim. At its most basic, gyeran jjim (literally "steamed eggs") consists of eggs whisked with water and something salty, such as salt, brined shrimp, or fish sauce. Seasonings like green onions and sesame seeds, as well as vegetables and other ingredients, may be added.
(Think of this like an omelette, where you have a basic technique and can change fillings and toppings as desired.) When steamed in a hot water bath, the eggs set into the loveliest custard with the texture of silken tofu. The softness and saltiness are the perfect complements to steamed rice – though I have also been known to eat gyeran jjim straight out of the bowl, with no accompaniments. Recipe: 100% Sprouted Wheat Bread.
It took me about a year to fine-tune this bread. I threw out a lot in the beginning. Here are the basic steps: Soak the grain. Sprout the grain. Grind the grain. Bake the grain. Condition the loaf. The bread is flourless and has no yeast, no dairy, no eggs, no oil or fat, no sweetener. Here are the steps in detail: 1. Rinse 2 cups of grain. A few more photos. 3. First, place a covered dutch oven or other heavy covered pot into a 270 degree F oven to preheat. Here's the food grinder working its magic. Here's my go with the blender. Using heat-resistant mitts (or folded towels), open the oven, remove the hot lid, place the loaf-plus-parchment into the pot, replace the lid, close the oven. 5.
Place the cooled loaf into a plastic bag and put into the refrigerator for 1 or 2 days - at least! The entire process takes about 5 days, from start to edible product.
