Raw Pecan Praline Fudge. A couple weeks ago, my boyfriend Eric asked me if I could make something praline. I thought about it, and after a while pecan praline fudge came to mind. I could make it fudgy with a coconut base, and sweet and caramelly with dates...it was sounding so good! I got to work creating it, and I have to admit it was quite enjoyable tasting the progress along the way (making sure it was sweet enough and just right). I topped it off with crunchy raw pecans and drizzled it with raw chocolate. I cut them into pretty big squares, as it was so good. I gave Eric a big container of fudge, expecting that it would last him the rest of the week. But he enjoyed it so much that he ate ALL of it that day. Raw Pecan Praline Fudge makes about 16 squares 3 cups dried, finely shredded coconut 12 medjool dates 1/4 cup plus Tbsp coconut nectar 1/2 tsp sea salt 6 Tbsp water 1 Tbsp pure vanilla extract 1 tsp maple extract 2 Tbsp raw pecan butter or raw almond butter 1/2 cup chopped raw pecans.
