Endless Simmer OH MY RAW caramel apples You have not lived. Not until you make these. I didn't think they'd be so darn delicious. But yet again... I was wrong. All the different textures and flavours make for an incredible experience. The best part? Why? Being "caramel apples", they clearly consist of an apple being covered in caramel. I covered a couple organic apples in that, and chopped up some fresh pecans and threw them on one (I put peanuts on the other). Who says raw vegans can't have any fun? Food is love, love is happiness, and happiness depends on health. So eat healthful foods! I wanted to get a few photos with a bite out of an apple, so I had an excuse to try them =) I took a big, messy, caramel-apple bite... literally stopped chewing and said "oh my god no freaking way" out loud in the kitchen by myself. I talk to myself a lot. But with good reason! I was noble today and gave mine to Dad after taking a few bites. He's trying to eat healthier and get in shape since he's struggled with his weight for awhile.

MELOMEALS: How to build a Raw Kale Salad I have made A LOT of Raw(ish) Kale/Collard Salads in my days! Having worked in two restaurants that were inside of health food stores, I had access to a lot of produce all of the time, so depending on my mood and ingredients on hand, I have sort of a template, which I would like to share with you. Most of my recipes are really just templates I color with this spice or that grain, etc. Basic Raw* Slaw 4 cups sturdy leafy greens (kale, mustard, chard, collards, spinach, escarole)2 cups red or green cabbage2 cups shredded carrots 1/4 cup diced red onion1/2 teaspoon kosher salt 2 tablespoons vinegar or citrus juice1 tablespoon oil (olive, sesame, flax, coconut) Massage together for 5 minutes or until the veggies start to break down You are essentially 'cooking' the greens here and not paying attention to flavor. Peanut Butter "Cheese Ball" I wasn’t kidding when I said I’ve been obsessed with peanut butter lately. But I think I’ve finally satisfied my craving. I made this peanut butter cheese ball for a get together last weekend that ended up getting canceled at the last minute. My husband was out of town for an away game so that left me with this peanut butter cheese ball all alone. The first time I tasted this was at game night at my friend Jenni’s house. If you are a peanut butter fan, you will love this. This is really kid friendly and what I did share of it with my kids, they loved eating with apple slices. Freeze the peanut butter mixture in saran wrap to make a ball shape. Peanut Butter “Cheese Ball” Ingredients 1 package (8 ounces) cream cheese, at room temperature 1 cup powdered sugar 3/4 cup creamy peanut butter (not all-natural) 3 tablespoons packed brown sugar 3/4 cup milk chocolate chips 3/4 cup peanut butter chips Graham cracker sticks, teddy grahams, and/or apple slices for dipping Instructions Notes

Roasted Peach and Ginger Chia Pudding Hi all! Thanks for the outpouring of love for Dreena’s book yesterday, and for the well wishes. I’m feeling more like myself today—glum about having had to change my plans and glum about the fact that I’m not with Jasmin and Mariann right now, but getting over my bug. I made the beautiful chia pudding you see above right before I started to feel under the weather, and so the leftovers are still around. The trick to this recipe, of course, is the roasted peaches. Roasted Peach and Ginger Chia Pudding Ingredients 2 ripe yellow peaches, halved and pitted 2 tbsp coconut crystals or cane sugar 2 tbsp coconut oil 1 2/3 cups almond milk (homemade or storebought) 1/2 cup cashews, soaked for at least two hours (or overnight) and drained 4 pitted medjool dates 1 tsp vanilla extract 1 tsp powdered ginger 1 tsp cinnamon 6 tbsp chia seeds Instructions 1.
