If you’ve been following along, you’re probably aware that I collect cookbooks. Specifically, cookbooks created by New England civic organizations between 1950 and 1980 for fundraising purposes. With yard sale season in full swing, I find myself solvent with new recipe ideas, among them one I found in this vandalized and water-damaged collection. The picture on the cover somewhat suggests the architecture of Calvary Baptist Church in Easthampton, but I bought the book in Millbury and it has no date (I’ve never been to that Church, I just tried to do some due diligence in my googling).
Nevertheless, it *does* include a chocolate cake recipe with a secret ingredient: ice cream. And hey, no cake flour or fancy measuring required, because we’re using cake mix. Even if I screw it up, the mantra seems to be that there is no such thing as a bad pie. Only the “this is pretty darn good pizza, pass another slice please” pizza, the “thank you soooo much for making pizza mommy” pizza (trust me, dinner compliments from the six and under crowd are a rare treat so this is the sign of a job well done), and the “Get your hand off that last slice, I called dibs and I’ll fight ya for it if I have to” kickin’ awesome pizza. This pizza is of the third distinction. I made my own crust (my recipe’s here), but you can also use a pre-bought dough or pizza crust and it will still work just perfectly.

Lazy Weekend Dutch Baby Pancakes. There’s something to be said for a lazy pancake breakfast on the weekend, however it’s usually lazy for everyone except the cook! Which, in my family, means me… While everyone else in the family gets to lounge about, drinking tea and reading in bed, if there’s to be a pancake breakfast it means that I’m usually working at a flurried pace in the kitchen, trying to get everything ready before hungry stomachs decide that they can’t wait and reach for Friday night leftovers or toast instead… Dutch baby pancakes (also called German pancakes – though this is not the same as Apfelpfannkuchen), are very different to the fluffier, cakier pancakes that are common in Western cuisine.
With no leavening agent and a very different flour : egg : milk ratio, the end result is denser and eggier, but that’s not to say that they’re any less delicious! Chocolate flavor too mild, texture too spongy, batter too dry, etc. I was looking for a chocolate muffin that had a deep chocolate flavor, was sweeter than what would be considered a healthy breakfast, but not as sweet as a cake, with a texture that is that of a muffin rather than a cupcake. My search is finally over. Meryl was generous enough to provide me with the recipe with her notes. After I let the muffins cool, I took one bite, and I knew my search was over. Best Chocolate Muffins (from King Arthur’s Flour) Yields: 12 muffins Preheat the oven to 400°F. In a large mixing bowl, whisk together the cocoa, flour, sugar, baking powder, baking soda, espresso powder, salt, and chocolate chips. In a large measuring cup or medium-sized mixing bowl, whisk together the eggs, milk, vanilla and vinegar.
