One night at dinnertime recently I had in mind to make some pasta, but I didn’t feel like anything with a heavy sauce. So I started pulling things out of the fridge that I thought might be good to throw into a pasta. It ended up as a really nice, fresh tasting meal, just what I was looking for. Plus I always feel virtuously healthy about eating so much spinach, even if it is covered in olive oil! Spinach Olive Pasta Olive Oil 4 cloves garlic 200 g package of spinach (about 4 – 6 cups) 1/2 cup sliced kalamata olives 1/2 cup sundried tomatoes, diced 1 tsp basil romano cheese, grated fresh ground pepper to taste chili flakes (optional)
