One night at dinnertime recently I had in mind to make some pasta, but I didn’t feel like anything with a heavy sauce. So I started pulling things out of the fridge that I thought might be good to throw into a pasta. It ended up as a really nice, fresh tasting meal, just what I was looking for. Plus I always feel virtuously healthy about eating so much spinach, even if it is covered in olive oil! Cook noodles according to the package directions. While that’s cooking, heat several teaspoons of oil in a deep skillet.
