Half Baked Harvest - Made with Love

That throughout this entire month of January I was able to stick with my goal of showing you all healthy, colorful recipes, AND that these healthy recipes have also been some of my FAVORITE recipes to date. I guess this isn’t actually all that surprising, since I truly love healthy foods. Persimmon Colored Memories. A recipe for the orange-colored fruit One of my fondest memories is of having Persimmon cookies made by an adopted grandmother named Betty.

Persimmon Colored Memories

She had adopted my father when he was a young exchange student coming to America as a wide eyed 19 year old. Grandma Betty always smelled of powder, and would always spoil me with persimmon cookies. The texture of her cookies are something I still cannot recreate. It was the combination of walnuts, cinnamon and persimmon that made them heavenly. When Autumn came upon us here in Southern California, My mother used to buy persimmons at the Japanese markets on Sawtelle blvd. My amazing photographer Mel recently told me to freeze ripe Hachiya persimmons in the freezer for an ice cream textured dessert. Persimmons contain health benefiting flavonoid poly-phenolic anti-oxidants such as catechins and gallocatechins in addition to having an important anti-tumor compound, betulinic acid. Tastingtable.

These grain free treats could just be healthy enough to enjoy for breakfast! Can you believe it’s already Wednesday? As in Day 3 of cookie week? Hump day just got even better. Yesterday Katie and I spent the day at Goddess and the Baker, a bakery and coffee shop here in Chicago. Out of the corner of my eye I also spotted a paleo chocolate chip cookie. Espresso & Oat Truffles. © 2009 Green Kitchen Stories We have been really obsessed with different kind of sweets and truffles this last month before Christmas.

Espresso & Oat Truffles

We’ll promise to contribute with more proper dinner recipes next year! But while it’s still 2009 we continue our Sweets-Without-Sugar-Crusade, how sweet is that?! Oat Truffles are a Classic Christmas treat in Denmark, here we’ve made our version with espresso, rolled oats and dates instead of butter and sugar. Try them, they’ll make a perfect match to the Warm Christmas Glogg! Baobab, mango, mulberry and ginger bites – Henrietta Inman's Clean Cakes. It’s Monday and it’s looking a bit grey and wet outside, so here are some energy-boosting sunshine squares to boost you through today and the rest of the week.

Baobab, mango, mulberry and ginger bites – Henrietta Inman's Clean Cakes

These delicious bites are not only energy boosting, but super-skin boosting too. This is thanks to not only the skin-plumping good fats from cashew nuts, hemp and sunflowers seeds, but thanks to the amazing feel good fruit, Baobab! Baobab, I love to use Aduna, is rich in vitamin C, almost 50% fibre and higher in antioxidants than goji berries and acai berries.

Vitamin C helps protect cells from oxidative stress, contributes to the normal formation of collagen in the skin and helps promote good skin health, not forgetting the antioxidant rich white mulberries, alkalising mango and immune-boosting ginger which is antibacterial and anti-inflammatory. Makes about 30 small square bites Drain the soaked mango and leave in a sieve for about 15 minutes to let excess water drain off. One Banana Bread for Chocolate Lovers, One for Caramel Fanatics.
