Ever! I have never eaten or made one. I know, can you believe that? Isn’t pot pie like an American standard? I think it is, but since it actually contains vegetables (peas, carrots and other veggies) and since I grew up with veggie hating brothers, pot pie was just not an option for me. I am still not really sure I can say I have made a true pot pie since this one does not fit the typical pot pie mold. They are creamy on the inside, right? Well, these pot pies have none of those. There is no peas, no carrots and no mushrooms. Ok, eww. Actually, they really don’t gross me out at all any more and I kind of think they have a prettiness to them. Anyway, the pot pies. To feel safe, secure, solid. Pinchos Morunos (Moorish Kebabs) with Mojo Picón - The Happy Foodie. These pork skewers with Moorish spices are an extremely popular tapa, although you could make them with any other meat.
Mojo picón is a pepper sauce from the Canary Islands and is a fantastic accompaniment to meat, fish or potatoes. Picón means spicy, and you’ll see why… Trim the pork fillet of any excess fat and then cut into 2cm cubes. Place the meat in a large mixing bowl and add the pimentón, cumin, some black pepper, oregano, thyme and garlic. Mix well, drizzle over the olive oil and leave to marinate for at least an hour, but anything up to 2 days is fine. Meanwhile, make the mojo picón. When you are ready to cook the pinchos, thread the meat on to skewers (if you are using wooden skewers it’s a good idea to soak them in water for 30 minutes to stop them burning).
