Rollitos de pollo relleno de ciruelas. Whoever coined the term, "the lazy days of summer" clearly did not have young children. Life has been busy... but no matter how much so ... I'll always find a way to fit in the food. What follows are the basic steps/photos to an Asian fusion inspired Asparagus wrapped in Phyllo Dough ... Trim your asparagus spears... Marinate the raw asparagus (for about 30 minutes +) in your favorite Asian sauces.

Here I used a combination of a goyoza dipping sauce from Trader Joe's , sesame oil, creamy peanut butter, a touch of Hoisin sauce and black sesame seeds. For each 4 pieces of asparagus , I used 2 pieces of phyllo dough .... Place one phyllo rectangle on a clean flat surface, brush lightly with melted butter and sprinkle with crushed peanuts (I used roasted, unsalted and sprinkled more peanuts on than what the photo below depicts) Then place the second sheet of phyllo dough on top and (again) lightly brush with melted butter.

This was the appetizer for my Saturday Dinner Party After a brief tour of the house, our guests gathered in the dining room where white wine was chilling and the red was breathing in an elegantly shaped decanter. The aroma of lemon and rosemary danced above me as I emerged from the kitchen with a glass block in hand. The visual of the single-file line of bold red tomatoes reminded me of school children gathering for recess on a chilly afternoon.

After a month of vacation in Germany, I couldn't wait to be back in my kitchen. Although I cooked a lot in Germany, I was not very inspired to try out new things, and my photography motivation was even worse, as lighting was often dull and I didn't have the right props and tools at hand to make the food look pretty for a picture. Now back in Dubai, I spent the whole last weekend pottering in the kitchen, creating bits and bites, cakes and crackers. Very therapeutic. It’s part hummus, part pesto, part guacamole. Its like throwing a Greek, an Italian and a Mexican together and telling them to have a party. Not a bad combination really, especially if they all bring drinks. I’ve actually been drunk in all 3 of those countries (sounds like a good resume booster, no?) And if I had to pick a favorite, it’d be Italy. If I had to pick one of those things this tastes like the most, it’s pesto. Oreo and Peanut Butter Brownie Cakes. Well these naughty little treats are well….naughty but oh so necessary.

There are a bit like my Brownie Covered Oreo’s from last Christmas but enhanced with layers of peanut butter and a double decker stack of Oreos in each little brownie cake. They are simply prepared in cupcake liners. Hope you enjoy this ultra sweet little cake Ok, I have to brag about this brownie mix from Trader Joes for a second. I know not everyone has a Trader Joes near by, however if you do, get a load of their ready to pour baking mix. Break out 24 Oreo Cookies. Some of your favorite peanut butter. Spread a teaspoon of peanut butter over Oreo #1. Press a second Oreo right on top One more teaspoon right on top. Place the little stack right into a cupcake lined muffin cup. Like so Take your brownie mix…. …and spoon a couple tablespoons right over top, letting it run around the edges of the cookies. Mmmm! Ahhhh, wait until you cut them in half.
