In our house, you’ll find it’s a very rare occasion when there is leftover mashed potatoes.

Aside from my potato loving self, my daughter Kaydence is a mashed potato fanatic. Her potato cravings have gotten so ridiculous that when we all sat down to watch a movie the other night, instead of reaching for the bowl of popcorn my husband popped, she ran in the kitchen to grab my bowl of leftover mashed potatoes from dinner and proceeded to finger dip in the bowl. It’s her obsession. However, this week she’s been sick and there were a few nights her appetite was so low that we ended up with a quart sized bag of taters left over. Instead of letting them go to waste I thought it would be fun to dress them up a bit with a Parmesan cracker crust. On the outside you get a crispy golden layer but on the inside it’s a silky smooth mashed potato bite. Bacon-Jalapeño Cheese Ball. I’ve been blogging for nearly 5 years, and though I’ve said it a million times before, I think it bears repeating that one of my favorite parts of the experience has been the wonderful people I’ve been lucky enough to meet.

One of my first blogging buddies was Jessica of My Baking Heart. We both joined the Tuesdays with Dorie group back in April of 2008, and continued baking together every week for the next three and a half years! Jessica always stopped by and left kind comments and words of encouragement for me, she’s a real sweetheart and I’m happy to call her a friend Later this month Jessica is getting married, and today we’re celebrating with a virtual bridal shower organized by Nikki of Pennies on a Platter. Congratulations Jessica, can’t wait to hear all about your big day and see the pics! I volunteered to make an appetizer for the shower as soon as I received the invite, but it took me forever to actually decide on a recipe. While the bacon is cooking, preheat oven to 350 F. It is a little morbid to think about, but if you had to decide right now, what would be your very last meal on Earth? As Blair and I drove to the Shake Shack a few weekends ago, I claimed mine would definitely be a cheeseburger and milkshake. This week I decided that yes that would be a delicious final meal, but can you really beat a grilled cheese and tomato soup? Of course, grilled cheese is not wonderful in my book unless accompanied by tomato soup. If that doesn't stop you dead in your tracks, then I don't think you're human. This is serious stuff. I have a family recipe that I use for standard fudge, but I like making fun and unique variations as well - peanut butter, pumpkin pie, and white chocolate have all been well-received in the past. But I'm pretty sure this one surpasses them all.

This comes together pretty easily, and honestly the hardest part is waiting for it to set up! The fudge was smooth and creamy, with the perfect cookie dough flavor. So head into your kitchen and make these now. 1 3/4 c. sugar 3/4 cup brown sugar1/2 cup heavy cream 1/4 c. milk1 Tbs corn syrup3/4 tsp kosher salt2 Tbs unsalted butter1 tsp vanilla extract1/2 cup flour1/3 cup mini semi-sweet chocolate chipsSpray an 8x8 inch baking dish with cooking spray and set aside. They accompanied quiche (made by my friend Becky), Mango Fruit Salad Salsa with Sugar and Spice Tortilla Chips, and Make-Ahead Sticky Buns. I love hash browns with a crispy exterior and moist tender interior. Traditional hash browns cooked on top of the stove are difficult to make in a big batch and serve to a crowd. So I tried baking these in individual portions in muffin tins that could be baked in the oven along with the sticky buns and quiche, and would be easy to serve buffet style. By cooking these hash browns in muffin tins, a large part of each individual serving forms a crispy, brown crust around the cup shape of each muffin portion. They remained tender and moist on the inside, just the way I like my hash browns.

I added some Parmesan cheese and green onions for a flavor boost, and used a small amount of olive oil to help them brown. Use mini muffin pans for bite-size morsels. Chocolate Coconut Bars. The penultimate layer is fancy talk for next-to-last. Finally, just add chocolate chips. Throw the whole thing in the freezer for an hour, have a few cocktails, and in no time you’re ready for the finest Oreo lasagna the internet has to offer. The one question you’ll probably have is, “What aisle is Cool Whip in?” DIRECTIONS 1. Chocolate Chip Cookie Dough Peanut Butter Cups.

I have a confession to make. I’m a little obsessed with the show Chopped on the Food Network. I don’t know what it is – you don’t get recipes from it, the 30 minute time limit they have to cook in is frustrating, and some of the items they have to cook with, I’ve never even heard of. Grilled Cheese Crescent Bites. Like most kids (and many adults), my children love grilled cheese sandwiches. There's something about the ooey, cheesy goodness that just brings comfort and happiness to your kitchen, especially on a dreary day.
