Peanut Butter Oreo Ice Cream Pie

Right now I’m in southern California running around Orange County with the beautiful Jenny from Picky Palate. Jenny is showing me the time of my life in her town — we are hitting all her favorite spots and eating ourselves silly! I will definitely be hitting the gym next week back in Alabama, say a prayer for me!! In the meantime, I couldn’t wait to share this fun homemade Peanut Butter Oreo Ice Cream Pie with you. This is one of the first desserts I made when Kevin and I first got married. It’s so easy to whip up, here’s all you’ll need. Finely crush 25 Oreos in a food processor or blender. Sprinkle the crumbs in the bottom of a 9″ pie plate… And pour in six tablespoons of melted butter. Oh my word. Stir the crumbs and the butter together, then press into the bottom and up the sides of the pie plate. This wonderfully thick Oreo crust is perfect and my absolute favorite part of the pie. Some vanilla… And whisk in 1/2 cup peanut butter until well combined.

And it just may be one of the best desserts I’ve ever made. You might remember that last year I whipped up some mini s’mores tarts. They were fabulous, but I must have had a few screws loose. Why didn’t I just make an entire pie? Oh! I guess not. Dreams do come true! Welcome to my new favorite dessert. Pleeeeeease make this. As long as you chill it, you should get a semblance of a slice out. I might have found myself kneeling on the kitchen floor, spoon in hand and head in fridge, scooping out s’mores pie bites. And I still have the crumbs on my kitchen floor to prove it. [print_this] S’mores Pie for crust 1 3/4 cups graham cracker crumbs 1 1/4 sticks butter, melted Preheat oven to 325. Add melted butter and graham cracker crumbs together until a crust forms.

For chocolate filling (from Tyler Florence) 1 cup heavy cream 1/2 cup milk 10 ounces semisweet chocolate, chopped 2 tablespoons sugar 1/4 teaspoon salt 2 eggs. Peanut Butter Pie. I made this pie today as a tribute to a fellow food blogger.

One whom I've never met, but who's blog, In Jennie's Kitchen, I've been reading for longer than I've had my own. Tragically, her husband passed away this past Sunday...suddenly, of a heart attack. The food blog community immediately took to the internet, reaching out, wanting to know what they could do to help her. Amazingly, she posted to her blog this week, to talk about her husband and to ask her readers to make this pie today. It was something he loved, and making it is a way to celebrate his life. Those close to me will know why this tragedy has hit me deeply. She passed away after a sudden, rare illness and her death was a shock to us all. I've wanted to talk about my loss here...as it's been such a major event in my life. It's a celebration of life.
